30 Minute Herbed Diner Roll Recipe
****See notes if using sourdough discard
-----------------------------------------------------------
INGREDIENTS
1 Cup Warm Water***
1/4 Cup Sugar
1/3 Cup Olive Oil
2 Tablespoons Yeast
3 - 3.5 Cups Flour ***
4 Tablespoons Butter
1-2 Tablespoons Chopped Fresh Rosemary
***If using sourdough discard use the measurements below
1/2 Cup Warm Water
2 1/2 - 3 Cups Flour
1 Cup Sourdough discard (can use active starter just stir it down before measuring)
1. Begin by mixing together the water, sugar, and oil in a large bowl.
2. Sprinkle the yeast on top and allow to set for up to 10 minutes until yeast is bubbly and active.
3. Add Flour (and sourdough discard if using) to your bowl and kneed dough until incorporated. The dough will be slightly sticky.
4. Wash hands and then coat them in butter. Divide dough in 12-16 pieces and place them in a generously buttered 9x13 pan. Once this is complete set the rolls aside to rise for 5-10 minuets
5. While the rolls rise preheat your oven to 400 degrees. Then melt the butter in a small sauce pan and chop up the fresh rosemary.
6. Once rolls have risen to be nearly touching brush each roll with a healthy amount of the melted butter. Finally sprinkle rosemary and salt on top of each roll.
7. Place in a 400 degree oven for 10-12 minutes until lightly golden brown
8. You can allow them to cool in the pan or remove them and enjoy right away.

These are absolutely delicious! Made these tonight, with sourdough starter of course. Thank you for the wonderful recipe! I topped with garlic powder, dried minced onion, kosher salt, and chopped fresh rosemary. I wish I could include a picture. Will definitely be making these again.

I absolutely loved this recipe. I use the sourdough started ofcorse which added a lovely flavor. A little too sweet for my family so I’ll cut the sugar in half next time and I also added 1/2 teaspoon of salt to the dough. I’ve already added the recipe to my book. Thank you so much.

Do you add a 1/2 more water if using sourdough or cut back to only 1/2 cup?

Does the olive oil replace the need for salt in this recipe?

I do not add salt to the dough because of the salt on top and I brush them with salted butter. If you do not plan to put salt on top I would add 1/2-1tsp salt to the dough when you add the flour in.

I’ll never understand NOT using a spatula to get out ALL ingredients…pretty sure if ‘recipe’ calls for a certain amount of ANYTHING, you should spatula it all out the container. Additionally, I find it very wasteful.

@@jenniferbowen8121 I cut back the water. My starter is 100% hydration so if yours is less you will need to adjust accordingly.
