Recipe in English:
Ingredients:
Prepare Khushboo Masala:
-Javitri (Mace) 2 blades
-Hari elaichi (Green cardamom) 8-10
-Darchini (Cinnamon stick) 1
-Jaifil (Nutmeg) 1
-Laung (Cloves) 3-4
Prepare Korma:
-Ghee (Clarified butter) 1 Cup or as required
-Pyaz (Onion) sliced 4-5 medium
-Chicken mix boti 1 kg
-Hari elaichi (Green cardamom) 6-7
-Sabut kali mirch (Black peppercorns) 1 tsp
-Laung (Cloves) 3-4
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Dhania powder (Coriander powder) 1 & ½ tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tbs
-Himalayan pink salt 1 & ½ tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Garam masala powder ½ tsp
-Dahi (Yogurt) 300g
-Water 1 & ½ Cup
-Warm water 1 Cup
-Kewra water 1 & ½ tsp
Directions:
Prepare Khushboo Masala:
-In a mortal & pestle,add mace,green cardamom,cinnamon stick,nutmeg,cloves & grind to make powder & set aside.
Prepare Korma:
-In a pot,add clarified butter & let it melt.
-Add onion & fry on medium flame until golden,take out & spread in a tray & let it air dry until crispy.
-In the same pot,add chicken & mix well until it changes color.
-Add green cardamom,black peppercorns,cloves,ginger garlic paste,coriander powder,Kashmiri red chilli powder,pink salt,cumin powder,red chilli powder,garam masala powder & mix well.
-Add yogurt & mix well,cover & cook on low flame until chicken is tender (12-15 minutes).
-Take out chicken pieces from pot & set aside.
-Crush fried onion finely with the help of hands & add in pot,mix well & cook on medium flame for 1-2 minutes.
-Add water,mix well & cook on low flame until thick gravy is formed (18-20 minutes).
-Add warm water & mix well.
-Add cooked chicken pieces & mix well.
-Add khushboo masala,kewra water,cover & cook on low flame for 4-5 minutes.
-Serve with naan!

-Kewra water 1 & ½ tsp
Directions:
Prepare Khushboo Masala:
-Mortal & pestle mein javitri,hari elaichi,darchini,jaifil aur laung dal dein aur ache tarhan grind ker ka powder tayyar ker lein & side per rakh dein.
Prepare Korma:
-Pot mein ghee dal ker melt ker lein.
-Pyaz dal dein aur darmiyani ancch per golden ho janay tak fry ker lein,bahir nikal lein aur dish mein pheela ker crispy ho janay tak air dry ker lein.
-Us he pot mein chicken dal dein aur rang tabdeel ho janay tak ache tarhan mix ker lein.
-Hari elaichi,sabut kali mirch,laung,adrak lehsan paste,dhania powder,Kashmiri lal mirch powder,oink salt,zeera powder,lal mirch powder aur garam masala powder dal ker ache tarhan mix ker lein.
-Dahi dal ker ache tarhan mix karein aur dhak ker halki ancch per chicken gul janay tak paka lein (12-15 minutes).
-Pot mein sa chicken pieces nikal lein & side per rakh dein.
-Haath ki madad sa fried pyaz ko finely crush ker lein aur pot mein dal dein aur darmiyani ancch per 1-2 minutes kliya paka lein.
-Pani dal ker ache tarhan mix karein aur halki ancch per gravy thick ho janay tak paka lein (18-20 minutes)
-Warm water dal ker ache tarhan mix ker lein.
-Cooked chicken pieces dal ker ache tarhan mix karein.
-Khushboo masala aur kewra water dal ker dhak dein aur halki ancch per 4-5 minutes kliya paka lein.
-Naan ka saath serve karein!

You can also roast Poppy seeds (Kashkhash) and Coconut powder, grind them and add in to Korma, it will take your Korma to a different level.

Thank you for uploading this recipe! I want to ask what ingredients specifically make this reddish Color for korma. I didn’t add kashmiri laal mirch (is that what adds Color), and used white onions instead of red ones. Please suggest what could be improved, thank you!

Nice 👍👍 But here in Delhi, the Qorma is not so watery😂 Original Dish, it's Semi thick Gravy like kadhai dishes. All items cooked together on slow flame till chicken is tender, saute than add 1 cup hot water , stir in crushed onion. Cook 10 minutes and off. It's not cooked after kewra and Khushboo ka masala is added.

@@FoodfusionPk because in our homes dahi is not added in the beginning...fried onion is crushed and than combined with dahi and mixed well...when meat is done it is than added and cooked until no water is left and oil comes up...

Nhi karwi Bilkul nhi hoti
Dehli kay qorma nahi hai yeh...is qorma kay andar salan paktay kay dauran adrak julian cut karkay daali jaati hai...aur brown pyaaz aakhir main dalti hai...aur us kay baad koi paani nahi dalta..
There is no cumin in Delhi wala qorma!
