    Thank you thank you thank you. I just put a half gallon of dehydrated chicken in my food storage. ❤. I'm so excited because I'm a single empty nester and this makes cooking for 1 sooo much easier. I'm going to do meals in a jar. ❤ 🙏 Blessings on you both.

    One thing to note on the chicken is it does not rehydrate well I had found. I love to snack on it dry but it is not the same as the ground beef. Someone mentioned that when you go to use it, it is best to powder it rather than using pieces. I may still dehydrate more either for powdering or snacking on from the jar though. Just wanted to give you a heads up on that when you go to use it. Some others also said if you pressure cook it before dehydrating, it rehydrates better but I am not sure about that one. Either way though, I still like it.

    @@bonnieeberhardt9518 I cook with it. I make pickles with it. Mixed with baking soda it makes a great grease cutting cleaner; that's all I use on my glass topped stove. I pour a bit in the rinse water of my washing machine. I make some tinctures out of it. Baking soda and vinegar for bites and stings. A sip to prevent heartburn; you have to be careful here; it's not for if you already have heartburn. A little in water in a spray bottle for a glass cleaner. Pour half cup of baking soda down a drain and then a cup of vinegar, let it fizz good, follow with some steaming hot water. It eases the pain of a sunburn. That's all I can think of off the top of my head.

    My dehydrator broke last week and my new one arrived yesterday. It has been working since I got it. Trying to empty the freezer since we have a storm coming up the gulf. I dried ground beef a few weeks ago and watching this, I may start with chicken. Thanks for all the great ideas.

    @@carolstrain2859 hi, I bought a NESCO but there are lots out there that are good. I heard presto at Walmart is good. Look on eBay too. You may still find a bargain. My old one wore out and I decided to get a nice nESCO $100 but I use it a lot and don't want another problem. Best of luck.

    Love it! We filled our freezers before the lockdown and I’ve been canning as much as I have time for to prevent loss in case of a power outage.     I’m looking forward to seeing how the chicken rehydrates for you. I have too many chicken breasts in the freezer and want to dehydrate some but I’ve also seen lots of people say that it’s just not great without canning first. I can’t get my hands on a pressure canner, so that’s not an option for me. I just found your channel about a month ago and I’m loving all your videos! I’ve inherited a treadle machine (from 1920), but you’ve inspired me to look at the Janome. I just don’t love the old style bobbins and am spoiled by some of the features my newer machines have and would like to use the treadle more. I saw that you’d mentioned that you’re having more trouble finding fabric since the shut down, if that’s still an issue for you, let me know. My quilt fabric stash is bigger than I’ll ever use and my students and quilting friends are always giving me fabric. I’d send you some in appreciation of what you do, just gotta tell me what kinds you prefer and I’ll see if I can help. Thanks for sharing- I’m off to find your vinegar video now.

    I had heard from backpacking people - who dry meats for the trail - that home cooked chicken did not rehydrate well, was not tender. They recommend dehydrating canned chicken for the trail meals. So I will be interested what your experience is when using this dehydrated chicken that you baked. It looks good. I would think that chicken that was pressure cooked (to tenderize) would dry well too. (Have really enjoyed your channel and videos - use a brake bleeder regularly for vacuum sealing jars). And to the person talking about canning jar lid shortages, you can vacuum seal (DRY goods) using other, non-standard jars with either a vacuum chamber jar (food saver has one) or by punching a pin-hole in the lid and using suction closed with electrical tape closure technique (as seen on YT.)

    I have found that if the chicken is cooked and then simmered a bit..and put in a blender and whipped....then dehydrated in small patties it will keep at least 2 years. So far... The trick is to whip air into it and dry it real dry. It won't be a hunk if chicken but it is perfect for trail soups.

    Your such an inspiration! I just picked my wild pansies and dried them. I never knew they were so useful. I'm new to all this type of lifestyle and have much to learn. I would love to see a video for beginners on what's the must-have tools that you could not live without, how you find your jars (green) and colored lids? I have been buying lost from value village but I think others have got my idea they were pretty picked over last time I only was able to get 4 good jars! Why do you freeze food in jars? What's your store room look like? I could keep going on and on, sorry! I just feel like there is so much to learn and not enough time! In general, though I'm really wondering how to turn your modern kitchen into on from the past. Thanks, love your videos!!! :)

    Hi Heidi. I want to share something exciting with you! We have been trying in vain to get the white tops to use with the brake bleeder to bottle food. They just are not available here (Scotland) last night my husband Derrick and my son Patrick invented a simple way to vacuum jars using the brake bleader, using the rubber sealer from a kilner jar and a plastic beaker with a hole bored in it it works! I am so excited! There are lots of folk looking for the white tops. I think I should make a short video showing people how it was done...what do you think? Blessings. Crystal Green. Ps.     With the unavailability of canning lids across the country (and seeing videos on the shortage of different metals) I'm thinking that dehydrating will need to take up the slack. I know I am dehydrating a lot more vegetables (and doing groung turkey and chicken, too). I just got my new NESCO dehydrator delivered yesterday (my 15+ year old one died this year) and the other NESCO one I had, had a "fixed" temp of 160. (It was sold as a "jerky maker"). That temp was waaay too high for my herbs! Anyway, just wanted to theow that out about dehydrating being a great need now. I thought you might want to do a video on it. I do have a KZread channel, but don't do videos as regularly as you do. (I'm thankful that you do! 👍)

    I made the dehydrated ground beef yesterday, it looks good, so I can't wait to try it. I'm going to try the chicken this weekend. My husband saw me pumping the vacuum sealer, so he went to Lowes and bought some adapters for his electric vacuum pump. YAY! Another note: I made soap years ago when we first got married, but that's also on my to-do list for this weekend based on your recipe. (I have no idea where my old recipe went to, that was almost 30 years ago) Today was bruschetta day with our garden tomatoes. Have a Blessed rest of your day!

    The chicken I found does not rehydrate well but I still love to chew on it straight from the jar. Seems that cooked turkey dehydrates a little crisper than chicken but I enjoy snacking on both dry. One person had shared that powdered the dried chicken works well for adding to soups, gravies, etc... you would not get the chunks of chicken but still get the flavor and protein. I am thinking of trying that next time I dehydrate it

    I can't remember if I told you or not. Years ago, during a hot summer, my mother in law was raising a a baby on cow milk and the cow was low enough they only milked once a day. To keep it from turning in the heat, my father-in-law dug a small diameter hole in the ground, with a post hole digger I believe, but it was 3 feet deep. The dirt that far down was much cooler. She would set a jar of milk down in that hole to keep it cool. Also if you have a well or deep cistern; you have to be meticulously sure you tighten the lid well; you can tie a clothesline around the neck of a jar and lower it to the bottom of the well. TIE IT OFF! THE Last thing you want is to lose the jar and the rope tied to it! Don't ask me how I know that. Thank goodness for treble hooks and fishing line 🤣

    I'm really glad you mentioned that you pump until it stops. I've been pumping to 15 lbs. as you'd said earlier and I can just flip the cover right off with my thumbs. This was worrying me. I'm going to start doing what you've said about pumping till it stops.

    I had to start doing that because my gauge was no longer accurate. First I started going past 15, then I started pumping it up as far as it would go and that works best of all

    I always pump it a bit past the 15 psi, I think I found one jar that had a loose lid, all others I cannot pry open with my fingers, I try everytime I open one.

    I laughed out loud when you were telling us about Tarheel cornbread, nearly lost a mouthful of jet fueled latte (and thank you so much for the recipe!) Not all southerners want sweet cornbread, but if making hush-puppies, a bit of sugar may be added to the batter with sauteed onion before frying. Patrick's right, white cornmeal does make better cornbread and you're right, yellow cornmeal for johnny cakes or fried cornmeal/polenta. Can never thank you enough for all you share!

    So glad someone gets it! I get a lot of questions about "what is a tarheel?" or "what is tarheel beans and cornbread?". When I started making the white cornbread cooked in a cast iron skillet with bacon grease, my father in law called me a Second Growth Tarheel. haha

    I find it interesting how you speak about cornbread. I am a Texan we use yellow corn meal but not sweet cornbread to eat with dinner or supper. We sometimes make sweet cornbread but it's like a breakfast cereal. I am a thyroid cancer survivor and have been on levothyroxine for 20 + years. I really need to see the info on how you got off the meds.

    If you have had your thyroid removed, then you will still need a replacement but I recommend looking for a natural form such as desiccated pig or bovine thyroid. I was on levothyroxine for 15 years and had a lot of problems with knee pain. Never was sure why. Went off the medications and one day several months in I realized I had no more knee pain.     Your videos are such an inspiration for me. It sounds like you don't have much of an issue with light degrading the foods in clear glass jars. I'm specifically talking about dehydrated foods. I'm considering amber colored jars for my dehydrated foods and my freeze dried foods. I dont care for mylar bags.

    I dehydrated chicken a couple months ago. Then a couple wks ago tried hydrating it. After about 10-15 mins it was still hard but starting to soften. When I try it again, I am planning to pour boiling water over it and let it sit for a long time. Then see how it does.

    When I tried it, I found it best to simmer for some time the day before, then added it to the enchilada sauce the next day and let it simmer more, it still was a little chewy but that did help a lot and the flavor is pretty good

    You can put your jars with the food in them. The dry food in them put them in the oven and heat them up and dont open door and let them start to cool i. The oven and they will seal themselves. You don't have to have a pump. One thing about this when you do seal your contents. You don't have to worry about your jars freezing and busting in winter.

    I just gotta tell you, you might be the find of my prepping life! I've always stocked a large amount of supplies on my shelves, but have only recently started looking into how to prep for much longer. Many things in the world have given me a greater sense of urgency. So I feel like a beginner and have started studying to find that there's A LOT to figure out!! I've now watched about 10 of your videos and I like the way you try to stay short and on point. That's really gonna help since I already feel overwhelmed. Side note: I can't find a bleed breaker that's attached to the pressure canner. I can find the pressure canner with the tube. Bleed breakers are coming up in automotive only. So how am I gonna know if I reached 15? Thanks!

    Yes, the brake bleeder pump is meant for vehicles, not for canning. That is why you are not finding it in food preservation. It has just been repurposed is all. You will know when it reaches 15 because it says so on the gauge. I do also want to add this tip I figured out since shooting the above video, frees the cooked poultry first before thawing and dehydrating, it would dehydrate better and turn out much crisper and easier to use

    I would like to try dehydrating chicken or beef jerky but like I said my dehydrator doesn’t have a temperature switch so I have always been procrastinating on giving it a try. I have the home essentials food dehydrator. Maybe I will cook up the chicken like you did and then give it a try on the dehydrator and keep it towards the bottom where the heat source is. What do you think? I had knee surgery not too long ago so I’m gonna take a break from the garden and watch another one of your videos and have a little lunch! Thanks again for all the hard work you put into them.

    Usually the concern when it comes to dehydrators without gauges is when drying herbs, meats will be fine, however, I need to let you know that dried chicken and turkey are best powdered for using IN things because they do not rehydrate well no matter how much they are cooked. I still like to dry and leave them in pieces for using more as a snack. I love them that way!

    I love your enthusiasm. I may end up trying dehydrating chicken. I will store mine in the fridge though, as I don't have a vacuum sealer. I imagine that will keep for a year or so that way?!? I'll find out! I love seeing your vinegars in the background on the counter. (I have 2 going now, thanks to you). I saw that someone asked if you could do a video on malt o meal... but I'd rather see how you would take wheatberries and make malt powder. Have you done that?

    Oh my, so much cinnamon sugar, we'd never use that in 2 years😁 cinnamon itself on the other hand I use a lot! Any recipe I sort of follow I cut the sugar by at least half and tripple the cinnamon😁😁

    Patrick likes his cinnamon sugar but he is healthy despite his age and being off his thyroid meds for many years now. I do not think sugar is as much as the evil people try to make it out to be but each person has to set their own limits.

    @@RainCountryHomestead you are correct, I am just not used to the general American oversweet, anything prepared, storebought - or even homebaked by people who follow the sugar amount of a recipe I cannot eat, one bite and out of politeness I will not spit it out. I did not grow up with it, though mom made all our jam one to one ratio, so there was plenty of sugar with the gooseberries, rhubarb, currants.... only in later years did she cut back on the sugar amount and we all had no problem, then we never ate jam by the spoonful (only cleaning out the pot after mom was done filling the jars :) ) Oh we had sugar cinnamon on some things too, but not on a regular basis. Heck, I even cut the sugar back on your cowboy cookies LOL

    It should last for years but one thing to note is that chicken and turkey do not rehydrate well. The best way to use them in cooking is to powder them but I LOVE snacking on the dried pieces so they never make it that far! haha

    I dehydrated my first batch of bovine thyroid glands. In order to preserve the T3/T4 hormone structure I set my dehydrator to max 40 C°. The problem I have now is the fat component of the glands. It will not dry complete and that makes it prone to getting rancid. Any suggestion(s) on how to solve the problem, as I try to use the glands for making capsules? 👍

    I DH some Costco rotisserie chicken yesterday and put them in pint jars. I tried to vacuum seal one of my jars but it was taking forever so I wasn’t sure if my unit was actually working properly or not and so I just ended up throwing an oxygen absorber in the jar. Is that going to be enough for each jar or will I need to vacuum seal it somehow? Also how long will this chicken stay on my pantry shelf with the oxygen absorber in the jar? Will I have to store in my fridge or freezer?

    Question? After you baked the chicken and shredded it did you wash off any oils or chicken fat that may remain on the chicken before you placed it in the dehydrator? I think that it would be very important to do. Have you ever dehydrated tomato sauce or the juice drained off commercially canned tomatoes? I haven't tried using my fruit leather trays to do this after dehydrating drained canned tomatoes. I want to find a way to dry and save the juice other than freezing it.

    No, I did not take the fat off. It is not as important as many have been led to believe, especially if properly stored. Nothing goes to waste. Five pounds of frozen corn and green beans each, sweet potatoes, 2 large bags of fresh coleslaw mix and today I filled 8 trays with thin sliced zucchini. I have two ripe pineapples going in next tomorrow. Still have one 3 pound bag of frozen corn to put in also. I like to dehydrate during winter because of the warm air coming off my dehydrators. Looking for a used one at a good price just to use for dehydrating onions, garlic and leaks.

    Hi Heidi! Checking on how to dehydrate chicken. Thanks for the very informative video. Also wanted to ask you: I made some vinegars and they have been soaking for a month and a half, almost 2 months (time flew in front of my eyes!) It did have some bubbles, not many, and only for a few days. Is it still good? I understand that you recommend to strain it around a month after making it. It doesn’t have a strong vinegary smell. And doesn’t smell foul. Do I just strain and use? What is their shelf life? Thank a lot!

    This video is just a bit old and I have since found that if you freeze chicken or turkey first, it dehydrates up lighter and crispier as I show in this video here: kzread.info/dash/bejne/dH56pMmSnJOzeZM.html The vinegar either went too long and is losing its vinegar smell and taste or you put too much sugar and it is not fully done. If it tastes and smells like wine, it is not finished and likely means there was too much sugar from the start. I recommend tasted it as well. If there is no flavor, dump it, if it tastes like wine then try allowing it to sit a couple more weeks. After that point, if nothing changes, dump it and start over.

I'm pretty sure it's identical to yours...guess I 'got took'. :-\ I'm also pretty sure that it mentioned a bean and corn auger in it's description. ???     Yes, and I found it did not cook up well, no amount of soaking or cooking would get it to fully soften or rehydrate BUT, I love it as a snack AND one cold always powder up once fully dry and use in dishes that way just fine

    I always have left over kombucha and it turns to vinegar can I use it in some of these ways you use your infusions. I love kombucha but I cant drink it fast. I always end up throughing it in the compost. Do you know if I can use it for infusions?

    While I do not like using vinegar for making extracts (I used to use it for medicinal extracts) because of the flavor, you can do that if you would like or you can use in many other ways in cooking or cleaning

    I am wanting to dehydrate some plain beef with just salt. Ive done jerky with raw meat, but wondering if you think I would have a better product if I cook the beef first? I have a Cabella's dehydrator which is similar to a Corsori so I can get temps a little higher if I want.

    @@RainCountryHomestead Thank you for getting back to me. I am wanting to make the beef crispy so I can eat it when I want something like that, but yes also to store for cooking with. I will listen to your video now. 😊

    Hi, I can't seem to find a video on YT that compares raw pack, hot pack and dehydrated chicken textures /uses. Trying to see what my family might like.

    I have never raw packed chicken for canning but one thing I have learned just by happenstance since shooting this video is that poultry that has first been cooked then frozen dehydrates much crisper and lighter than not freezing the cooked chicken. Others have also said that pressure canning or cooking the poultry before dehydrating also makes it dehydrate up better

    Most Popcorn is non-GMO and grinds and bakes just fine.
