Riki/Bryan, if you love boulette and dumplings, you gotta check Selven Snack at Pamplemousses. He used to be a chef in France and now opened his restaurant by the Botanical garden. I guarantee you that you will go there more than once.

Oh I love venison. Deer is very lean, no fat in it hardly at all. Usually you need to add another type of fat to it. I didn't hear how the man made his burger juicy and stick together like that. If I was to guess I'd say it was pork or beef fat. My mother used beef fat for the deer jerky she made. Same with deer sausage. Good stuff.

He did say how he made them juice, so probably beef or lamb fat. Pork is a no-no in most of places here

I think it is only in Mauritius where one can eat a four course meal starting with entré boulette (dumplings) which is south Chinese, main course kalia (is it similar to vindaloo ?, definitely indian) with rice, the another main deer burger ( German ??) with french fries and finish with Falooda (Indian, Filipino). Here in Paris, I would be restaurant hopping to eat all that. Rikki seems quite adventurous in exploring food !
