I’m not used to these new escape sequences. They changed these animations so much. Not to mention the change of Agatha saying her lines before the chase happens. Nice way to make you notice it rather than focusing on escaping.

Stages one and three have the bosses that were in their Monsters and Mortals stages ( so basically a chef version of the murder monkeys and a giant version of the gold Watchers) but stage 2 actually has Agatha as the boss

If I have to be honest the Clown escape sequence was quite underwhelming compared to the rest.

Yes. You're suppose to lure the guard monkeys away from one or two of the paths.
