the dankness It's because Stephen is a gracious host and, unlike Fallon, it doesn't have to be about him 100% of the time.
Loved this segment. This chef has a great sense of humor.
Anytime you see a recipe include bones, testicles, guts, the comb, beaks...and so on, you know the culture it comes from has been through periods of starvation.
Colbert: What if I have a nut allergy? LMAO!

Noir Rain I come from the near past, where it is also 4am, with a warning. It may seem like a great idea to put chocolate syrup in your yogurt, but it’s a mistake! Also, that leftover pizza is too old- just throw it out.

Dimitri Lovsky Calm down. It’s a joke. You’re familiar with those, I assume. Just wary because I got it from organic raspberries once. But yes, I am familiar. There was an Anthony Bourdaine episode in Japan I think where he ate what was essentially chicken tartare and didn’t get ill.

not only they are tasty but also cooking and eating these parts prevents waste. If you're eating an animal the greatest service you can make to mother earth is to make use of everything it gives to you. IMO the more of the animal you make use of, the more you respect his sacrifice to feed you.

They are particularly well prepared. Oporto in Portugal has a specialty of tripe, because ships sailing to the New WOrld would embark salted beef, but the innards had to be left behind. And the southern Germans use the lung for "Beuschl", a cheap but tasty mean with a Knödel. Needs spices...

Haha all these commentaries by Americans who haven't eaten meat besides pure muscle in their life ^^' don't judge anything as disgusting until you have tasted it. On the face of it, why should cooked testicles be disgusting? I get a slight aversion to it, but honestly I don't see a difference to things like liver. It's just another sort of meat. One of my favorite dishes is calf's tongue, that's just delicious and tender, you just have to get over yourself and open your mind a bit.

truth. liver, tripe, and lots of other parts taste awesome when cooked properly. one of the best tasting soups in the whole fucking world (mexican Menudo) requires beef stomach (tripe) for the correct traditional flavor.

Yes indeed, tongue is some of the best meat in the animal. I could eat the testicles, but one thing I've tried once and still find completely repulsive is brains.

Americans in some parts eat Rocky Mountain oysters aka cattle testicles, most people in general should just try to be more open-minded about food

If you're eating an animal the more you make use of its parts the more you respect its sacrifice to feed you. So no, eating these parts is not disgusting, actually most of them are very tasty and considered delicacies around the world, and you're preventing legit good food from being wasted. It's a win-win situation.

It's actually really good stuff. Vole-au-vent is a french classic, although usually it's much smaller. Usually there is only the puff pastry and the mix of meat or crayfish and the stuff inside, no rooster on the top. This was Daniel Boulud's interpretation of it. :)

The only thing I've heard rooster used for is coq au vin, which can make tender an otherwise tough chicken portion.

I've had turkey testicles before, at Itzik Hagadol Grill. They tasted somewhere between liver and sweetbreads (aka pancreas). Also, they were quite tender and juicy. Just puttin' that out there...

I think in 20-30 years from now we will all feel a bit strange about seeing dead animals on a TV shows and look back at clips like that and ask what the hell were they thinking. And I am not a vegetarian, I do eat meat.

Like the first time I ate pig testicles, chicken testicles were just there and part of what had been prepared for "supper". Now millions of people see it as "intriguing". I saw it as food. And Stephen was wrong they taste like chicken, not like "testicles". I have tasted both. And yes, I have a preference for...

i've never heard about it as a french guy who knows about local cuisine from north to south of France. Frankly this dish is totally what americans would thought of french cuisine, it's super vulgar and chaotic, just too unpractical to eat and there is way too much different things at the same time (that would not go together). Most of french dishes are way simpler and less "aristocratic/hyper bourgeois like".... But hey, every time i visit a country i try the craziest traditional food there is so i guess i'll try volaille testicles once ;)

Ewww that sounds about as appetizing as Rocky Mountain oysters, also known as prairie oysters in Canada, or calf fries, is a dish made of cattle testicles. The organs are often deep-fried after being peeled, coated in flour, pepper and salt, and sometimes pounded flat, ouch and ewww.
