Gluten - friend or foe?
This was the talk that got the standing ovation and changed everyone’s eating habits for the rest of evening. Over the course of 15 minutes Dr. Rodney Ford, MB. BS. MD. FRACP, and a pioneer in the field of paediatric food allergies, convinced an audience of 500 that nobody is equipped to digest gluten.
How did he do it? By using lego! Dr. Ford showed us the indigestible gluten protein is chased by the antibodies that our systems create to combat the gluten. Based on decades of research, Dr. Ford believes that abundant health can be achieved by anyone who eats the appropriate foods.
Dr Rodney Ford, MB. BS. MD. FRACP, is a paediatrician and former Associate Professor in the Department of Paediatrics at Christchurch Clinical School. He is a specialist in food allergy and gastroenterology at the 'The Children's Clinic and Allergy Centre', Christchurch, New Zealand. Rodney's philosophy is “diet: not drugs” as he has seen too many people given medications for symptoms without first considering the possibility of food allergy or food intolerance. Rodney has been investigating adverse reactions to gluten for over 20 years and these illnesses have now been labelled “Gluten-related disorders” or Gluten Syndrome, with world-wide evidence accumulating that gluten may not be healthy for us all. Dr. Ford's current goal is to bring communities up-to-date about the harmful effects of gluten.

    I am chef and co-owner of The Birch Tree Cafe, Delaware's first dedicated gluten free bakery and lunch cafe. I want to thank you for speaking out about harmful effects of gluten being more than just for celiacs. I have celiac myself which of course drives my passion to make available safe foods and awesome breads that are good enough for anyone and are the thrill of those eating gluten free. I will be posting this on my business facebook and referencing it in my next newsletter so that I can share your simply-put yet powerful message and will ask that my followers share it out as well. Keep up the message that safe gluten free should become the norm and hopefully more restaurants and bakeries like mine will be popping up.

    Thanks for your encouragement. It is my prediction that in another generation (20 years) that most people will be eating gluten-free.     Only discovered two weeks ago that my chronic fatigue and chronic migraines were caused by gluten. I lived that way for years! No more fatigue and no more headaches now.

    I’ve been so fatigued for almost 2 years. Thought it was burnout due to my work. Now i’ve been off gluten for just 2 days and see a massive improvement in myself. Can’t wait to see where it takes me with the fatigue!

    As I’m watching this guy I’m sitting here crying. I have been in pain with heartburn and gallbladder for the last year. I was facing the gallbladder surgery. And I remember telling myself it cant be right! You are only 30 years old and on medication- this is not a life for me. I knew there was something in my diet I just didn’t know what. My physician she was like an angel sent- she said quit wheat and dairy and see what happens. It has been only a month but what a drastic change!! No pain no medication and no heartburn. I pray people around the world realize what causes there health problems before it’s too late. Thank you!!!

    Hey, I have gallbladder issues too, would you mind sharing what problem you had? I have gallbladder polyps and doctors are suggesting surgery. Also are you still gluten free? Hows it going so far?

    16 years ago I was diagnosed with Relapsing and Remitting Multiple Sclerosis. The drugs my neurologist prescribed have horrible side effects so I chose to address the disease with diet with the knowledge that if diet failed I could always fall back on the drugs. Everything I read said to eliminate gluten and I did. Within 2 weeks of being completely gluten free I could tell I was on the right track and after a month I was a new person, the MS was non existent and I just kept getting better and better. After 6 months of being completely gluten free I was amazed at how many of my chronic health issues were GONE! From acid reflux to chronic depression to canker sores and more. It has been 16 years since my MS diagnosis and while most MS patients get an exacerbation every 2 years (and in retrospect that is exactly what I experienced) I had NOT a single exacerbation and I KNOW I will be fine for the rest of my life as long as I stay away from gluten. For me, gluten is poison.

    That’s interesting, I’ve known several women with MS who tried a gluten free diet and it made absolutely no difference. Maybe you were misdiagnosed. Or a relapse will be coming in the near future. I wouldn’t be so confident just yet.

    I quit bread and beer for 6 months... Lost 45 lbs, got completely off daily Claritin (18 years worth), and my quality of sleep hasn't been this good since I was a child.

    Just seeing your post made me think that I have dieted giving up any flour products before to lose weight and I do sleep better. 🤔 I never made the connection until now that I have so many problems and had to research.

    I had the exact same experience back in 2001. Unfortunately I did not reckon with the addictive properties of gluten. I am still struggling.

    I gave up gluten 4 months ago -my body is still spasming, but it’s getting less. Best thing I ever did. But it’s a slow road.

    I've been gluten free for almost 4 years and I no longer experience GI problem. My family and friends also considered me to be the problem when I can't eat their food. It's great to know that there are someone like you who speaks the truth about gluten. Thank you for such a great presentation with a sense of humor. I enjoyed it very much.

    I eat sourdough bread, but I avoid regular bread. You could try buying special enzymes for digesting gluten and wheat and take those pills with you if you're invited to be on the safe side or just refuse. There are special enzymes you can research.

    I appreciate this evidence based talk from a doctor fighting a hard fight. Whether folks like it or not, there are people in this world who are non celiac that become sick from gluten. I have been gluten free for 12 years. I got progressively more and more sick and doctors could not/would not help me. I did my own research and decided to do an elimination diet since I couldn't afford more medical visits. Mind you, this is before the fad really began but I was desperate to feel better. And gasp it worked. I got better. My distended stomach went back to normal and my digestion normalized. I stopped being in pain everyday and I had real energy. I have had so many people tell me it's all in my head, that my results are imaginary or that what I'm doing is not healthy but I dont care. The truth is that results speak for themselves and gluten is not an essential nutrient so what does it matter? Unless you have experienced the prison that your own body becomes when you have this problem for years and years or sympathize with those who have, then it doesnt matter what you think.

    I'm amazed at how nasty people can get over food issues. If you watch the video and you choose to change your diet, great. If you disagree and don't change your diet that's fine too. Make your own informed choice. I've been totally off gluten for 4 months and feel amazing, but that's my choice. If you disagree with on this issue, there is no reason to use filthy language and degrade them for having an opinion different than yours and vice-versa. What happened to civility and having respect for one another?

    You'd be surprised at the efficiency of 'bad language' The problem is that virtually all 'diets' are fads, usually perpetuated by unscrupulous people more interest in money than understanding the real science that they bend to their purpose, and there are a lot of very insecure people who drink in this rubbish (speaking generally, I've not yet watched this video). If you have a health problem, by all means research it, but ensure you also consult with a doctor. Much of the effect of 'medicine' is as we know placebo, and so those who stop eating gluten (etc.) for non medical reasons MAY see the results they wish to see, or they just may not know that they have an underlying condition. Too much (and in some cases) too little of anything is bad for you! You appear to be psychologically/intellectually capable of making an informed decision. A very large proportion of the population is deluded in thinking that it can also - those most at risk! Pandering to unstable, insecure people is ethically wrong. Any method that gets that point across and helps protect the vulnerable people in our society should be applauded IMHO. For further proof of 'vulnerability' take a look at some of the comments in this list - frightening isn't it? ;)

    i guess some people feel they have the answer and are so passionate about it they want to share but then cannot handle rejection - agree with you I went from government food plate food pyramid to ketogenic diet and lost 30kg and improved all indicators and feel fantastic but there is probably a vegetarian somewhere saying a similar thing - we are all different

    KL B my husband hashimotos thyroid. His doctor said it would be a good idea if he did not eat gluten. I’ve been trying to sneak things into his diet but he’s fighting me saying gluten is not bad. He said I’m hurting myself. He basically is mad right now because he said I better get back on gluten.

    What they don't tell you is that the wheat and grains of today have 80% more gluten then they did 50 years ago because of the changes to the grains to get higher yeilds

    Because to prove foods have been altered at the genetic level, which causes harm to our immune systems and gut microbiome, we would need to go back in time to before they started flooding the market with synthetic seeds. :(

    I appreciate this video as a celiac however I want to say that not all children present with these symptoms. I did not have failure to thrive symptoms nor was I a thin child. To all eyes I looked quite normal however as a child I had severe headaches, stomach pains and chronic patches of eczema on my arms and legs. As I grew older the symptoms got worse and I had horrible acne, migraines on a weekly basis, extreme mood swings, weight gain, hair loss and I became hypoglycemic. I wasn't diagnosed until I was 26 and I was only tested because I begged my doctor to test me after he told me she didn't think I had celiac. I was told so many times by doctors that there was nothing wrong with me and every symptom I had was "in my head" or I was "stressed". I cut gluten out 100% January of 2016 and I've never felt better. My skin cleared, I lost weight, my mood improved and I no longer had chronic stomach pains and migraines. Within 6 months I would say I felt like a normal person. I wish more doctors were being educated about gluten and celiac disease. I was miserable for the first 26 years of my life and not once did a doctor even mention that celiac or gluten could be the cause. In fact I had never even heard the term celiac until I started googling my symptoms and then when I presented my doctor with my concerns that I may have it he said to me "well you're too tall to have celiac disease." WTF? I'm 5'4" for reference...pretty sure that's not very tall.

    My heart goes out to you Autumn! I had extremely similar issues and when I was around 25-ish(memory of back then is a little fuzzy due to the brain damage of gluten) I completely stopped gluten and all hidden rebranded gluten chemicals like yeast extract and whey and so on. I was 5'5" when I stopped and suddenly grew 2 inches within around 1-2 years of quitting. Doctors are taught a specific way of working and rarely stray from their directed path. For goodness sake my skin was literally melting off my body in sheets! Everything I would touch would Melt from the acid seeping out of my pores due to an overactive immune system! The doctors would just tell me I should see the skin doctor...

    I was diagnosed with celiac at age 8 because I had lymes and we think that triggered the gene to present itself. Had my doctor not been so proactive and had my mother test for celiac I would not be the 5'9" that I am now at 15. My auntie is extremely short and has had cancer because her celiac went untreated for so long.

    My husband has advanced Crohn's disease and I have Hashimoto's Thyroiditis. I understand what gluten is and it's harmfulness however, my husband does not. This video has helped him, thank you!

    I totally agree that eating gluten is not the cause of most illness. Nor does everyone who tries out a flute-free diet feel better. When we stop eating gluten, many things in our body will change. It is important to add back the energy and micronutrients of the food that has been eliminated. What I am saying is that everyone who eats gluten has physiological effects, that can with time cause irreversible harm. We all need to be aware that wheat, a ubiquitous food, is unwittingly harming many people. With awareness comes the ability to take action. Dr Rodney Ford

    Rodney Ford thank you doctor ford. I have been gluten zero for some time now. And I can confirm I had a series of conditions which had no clear cause one after the other disappear. I would like to point out something that during my journey I discovered a condition called rope worm. Which has come to light in the last few years. There is hypothesis that it is caused by splicing wheat with bug genes in genetically modified wheat to stop bugs attacking the plant. This then embeds itself into the gut and becomes a self propagating worm that literally sucks onto the lining of the intestine and has a blood head. It does seem that for me this was a cause in my condition in that when I went gluten zero as you call it, I passed masses of this rope worm material it has different stages. The people who investigate this recommend a series of different enemas that seem to help eliminate these rope worms and they definitely helped me, but the reason I noticed and investigated to begin with I noticed them coming out in the toilet after giving up gluten and shared the picture on cure zone which led me own this path. I'm mentioning it because it may explain partly why the gluten reaction yet not celiac phenomenon you describe. Thanks for your work and promoting the truth. You are doing gods work and history will remember you well.

    A few questions for you. Is the issue the wheat that has been developed over the past 300 or so years, or all wheats? There being wheats that are diploid, (eikhorn) tetrapoid (emmer, durham, khorasan), and hexaploid (common or bread wheat, spelt), each of which supposedly have different gluten proteins being produced. From what I have read many people can eat the diploid varieties. Also other grains such as barley and rye contain varieties of gluten. When I say varieties of gluten I mean that like animal proteins, different plants have similar proteins that are not exactly the same chemically but have the same function. So are all wheat varieties equally dangerous, or is this something that has become worse as we as a society changed from farming the diploid varieties, to mostly the hexaploid and tetraploid wheats varieties?

    gluten sensitivity does not actually exist. I suspected it did not because people who have "gluten sensitivity" have no elevation in inflammation, negative biopsies of their intestines, and no antibodies to gluten. They have no objective findings at all. The scientists who partly contributed to the gluten fear were not happy with their initial studies because the people who complained of GI distress while eating gluten were also eating other foods that could have caused the GI distress. They organized the gold standard study: a prospective randomized placebo controlled trial. They had 3 groups and provided all of the food to these people who claimed to be gluten sensitive. The food was free of all the types of foods known to cause gas and distress. One group was given food with high gluten, one was given low gluten, and one received no gluten. None of the groups knew if they were eating gluten. Guess what. They ALL complained of GI symptoms. There was no difference between the no gluten placebo and the high gluten consumers. In other words it is unlikely that gluten has an effect. Of course that won't stop all the wheat belly, grain brain zealots. They rarely let science get in their way.     After a lifetime of Anxiety, nervousness and being underweight and ending an emotional wreck with constant worrying racing thoughts i recently discovered after watching various presentations about Gluten and wheat and its effects on human health. I immediately eliminated all wheat/ Gluten from my diet..pasts, bread, etc and just kept to a diet of real foods such as vegetables,fish, fruits etc and within days I was a different person. Mentally and physically calm for the first time in decades. I have tested myself several times with reintroducing pasta bread noodles etc and within days my negative symptoms return..I am now wheat and Gluten free for life and I've even got an appetite for the first time in years and gained solid healthy weight and strength..

    That's awesome to hear, I quit gluten a number of times and saw its benefit. Not gluten only but avoiding added sugar as well. My anxiety is almost nonexistent.

    @@hudamohamed6810 good to hear your experience. Wheat / Gluten may be fine for some individuals but I think most people would do well to cut it out of their diet. The human digestive system it seems is not compatible with Wheat and Gluten and also cows milk can cause an issue for some people...

    Innercynic hi. If you have not already read about the Elimination Diet I would recommend it. I had so many health issues for being only in my thirties. After reading the elimination diet and trying it I found out specific foods that were causing all kinds of problems for me. You should look into getting a live blood analysis done at your neighborhood health food store call around and see who offers that.

    I have just been part of a "Gluten-Related Disorders" seminar and this is one of the comments from a participant: "Thanks for organizing such a marvelous event. The info I gained will aid my family and I to start living in health and begin to heal our bodies.” The seminar was organized by Kim Rice of GIG Tri-Valley. CA. AS I say in the video, adopting a gluten-zero diet helps so many children. In my opinion, eating wheat/gluten is not worth the risk!

    I had mysterious abdominal cramps for months that were so severe I thought I had appendicitis, all my tests were normal the doctor just said you have IBS take Librax and go home, I didn’t use the drug I decided to go Gluten free and see how it turns out, its been a week now and the pain just stopped, I have more energy and more clarity of mind. I’ll continue on this path.

    I have been on 4 Blood Pressure medication since i was 32. My blood pressure is still high when i miss a day of medication but my sugar and cholesterol levels were really good. I baffled my Doctor. Many tests and scans failed to point out the cause of the high BP. When i turned 51 this year i decided to give up Gluten and Sugar and after two weeks , my BP dropped to 117/72 for the first time. I decided to skip my medications for two days and my BP was even better 112/70. I bought a new BP monitor just to make sure it was correct and it's still below 117/75 everyday. I should have done this 21 years ago instead of popping pills. ''You are indeed what you eat''. My body has been fighting the poisons i have been putting into it , hence my high BP from the age of 32. I haven't felt this good in a long time.

    At age 73, after yrs of high blood pressure; after having a mild stroke, got off GLUTEN and DAIRY... amazing..I HAVE NOT needed this or any other meds since then. GOOD FOR YOU!!

    Had a foggy head, been extremely constantly sleepy and tired out, had bad headaches and had a problem with stomach pain, stopped eating gluten and my stomach doesn't hurt anymore, I feel more rested even with less sleep when I wake up in the morning, and my mind is no longer foggy. I am pretty sure I don't have the disease but I am pretty sure I do have a gluten intolerance.

    Wow! I never knew this!!!! Thank you! My kids and I will be gluten-free starting now. This makes sense. Already gave up meat, dairy, sugar(s) and IBS is much, much, much better. I'm able to work and don't have 'accidents'. Researching what gluten is in now, all foods. Thank you.

Yes there are not essential carbohidrates but vitamins, minerals and phytochemicals presents in plants are crucial for good health. Greetings

    This is a tricky issue because of the publics resistance to "gluten-free" at this point... It's difficult when you KNOW you feel better without eating wheat but nobody believes you and everyone thinks it is in your head. Well sorry, I had chronic fatigue syndrome type symptoms until I quit eating the stuff, for more than half my life, you are telling me I was making that up, ok I get it, not a doctor... yeah yeah, we need an authority figure to decide, I get it... But then how would you explain me having MORE energy than ever as a child or teenager after giving up only ONE thing, wheat? I know how I feel.

    +Leyla Avci I seriously doubt that you gave up one thing or restructured your diet in only one way. Especially prior to the zenith of the fad, when gluten free junk is not widely available at a 'good' price, you will likely be restructuring your diet in many ways, some of them quite healthful.

    +Leyla Avci It's called a placebo effect, something extremely strong. Sugar pills are known to show improvements in people with chronic migraines, but only if that person is told that the pill will help with headaches.

Since discovering this, I will do a little dietary change...more vegetables and proteins. This is going to be a personal experiment. No one has to validate our dietary choices. If you are not trying to shove your ideas upon other people, they may not notice. If you are healthier, and feel better, then that is the important thing. I wonder if you are still experiencing the positive results.

    Anonymous - yes totally, that's why my hair stopped falling out and the rash all over my face went away and... The kicker, my resting heart rate went from 180 to 75 beats per minute and I no longer faint when standing up. Totally placebo effect.... Gotcha.

    My story all started with respiratory symptoms, which lingered after a regular run-of-the-mill cold back in October 2016. After that cold I never felt right, even googled "got sick and never felt right again". You don't get much from that search either. LOL. My doctor tested me for food allergies, and it turns out I was positive for gluten. I had follow-up tests to check for celiac and that was negative. So I stayed away from gluten and felt better, of course. But slowly I started eating gluten again and had no respiratory symptoms. So, yes, I kept eating gluten. Fast forward to 2022 and now I have the back and forth with loose bowels and constipation and also bloating. I'm thinking my symptoms have progressed to digestive now and not the respiratory I had in the beginning.

    I was very sick a lot of years, everything was getting worst, i couldn't see well, a lot of headache, inflammation, ADHD,skin problems and more, i stop eating glutten 3 weeks ago, i don,t have had headache, inflamation ,and i see alot better. I went to a lot of dr in 10 years, and they couldn't find my problem, after alot of test and dr, after some one say it may be glutten, i stop eating glutten and i feal so good, i am not afraid of eating every day 3 times a day eny more, i am enjoying food and eating out whit friends again.

    For me, this is so true, I learned it the hard way but never thought these ideas about gluten were any important at all and I don't blame it all on gluten because I don't know but after three years being sick and trying everything I could find to heal myself, I stopped eating gluten and voila! my stength came back. I'm still a little underweigh but I feel myself again so thank you so much for this talk.

    I gave up gluten 6months ago after being diagnosed with an auto-immune disease (MS), and I never looked back! Two weeks after I jumped on my new diet, I lost all my horrendous athma like caugh, this was just a start.     I have started dramatically reducing my intake of gluten, with a goal of being gluten-free most days at least (it can be harder when eating out). Since I've started cutting way back on gluten, my vitamin D and Iron levels are finally normalized after at least a decade of being dangerously low. My night sweats have mostly gone away (unless I eat a meal with a lot of gluten), and my bowel issues are slowly getting better (at least it feels that way so far). I started having regular periods again too after years of thinking I was going into early menopause or something, now I think I was just malnourished. I did not test positive for celiac disease when my gastroenterologist blood tested me, but I sure have noticed a difference in changing my diet.

    It's regrettable how experienced medical professionals can be so short sighted and refuse to address a problem that appears to threaten their existing paradigm of thought. I have learned the details of how a high than natural percentage of doctors are of a personality type that seeks to maintain existing models of thought and have to be thoroughly convinced before agreeing to change. It's a core personality trait that is found in a certain amount of people in general around the world. There are other personality types who are the opposite of this. No wonder.

    You never heard of gluten intolerance until instant yeast came on the scene. Up until the last 100 years the only way to make dough rise was with slow fermentation (sour dough) . Wheat is a difficult grain to break down and instant rise yeast does not do the job.

    Truly spoken! According to my knowledge a naturally rised bread made of fermented sourdough is far less likely to hurt anyone (except "true" coeliac patients with zero tolerance for gluten) than a bread made with instant yeast. If you're looking especially at North America and Great Britain, well it's very hard to find a decent, traditionally made bread there, you see highly processed foods wherever you look. It woukd be very interesting to take a comparative look at Germany, Poland, the Czech Republic and other nations where there is a long tradition of baking with sour dough and see how many people suffer from the same problems there.

    @@blissfulsoul9380 , another big problem of our time is that people don't move enough. We aren't designed to sit on our asses all day and our digestion isn't either. It's not just that you don't burn calories, also in my experience the actual movement of the body does a lot for your well being and digestion. Native Americans surely didn't suffer from a lazy lifestyle back then and nowadays, as some of them do, they have the same problems like all the rest of the people. My point is: Even though fermentation makes bread way more unproblematically to digest you can get away with a lot of things while leading an active and healthy lifestyle. And by the way: At least the native mexicans make their corn bread (e.g. tortillas) with a process called nixtamalisation, which is supposed to be some kind of fermentation of the corn as well.

    I would like to share my experience with gluten. I loved bread all my life. In my country where I originate from we eat sourdough bread. I never had trouble with it, nor with any grain product ( at least I didn't know about it). In my early thirties I relocated into UK. Very soon after the move I started getting diarrhoea after nearly every eating. Never heard about IBS before, I did put it down to stress. It took time to realise the food itself causing these problems, the bad stomach aches, the loose stools, especially the flour based foods. I still don't know what is a difference between the continental and the UK flour. I never have these stomach problems in Europe, regardless about the type of food but here in UK it often flares up.

    it is the sourdough aspect ..they allow the bread to rise overnight so it digests the gluten..they way we process bread now in the states it is quick rise and the gluten is not digested/broken down this way like it is when you allow it to slow rise--maybe the UK does it the quick way as well..

    Went cold turkey from gluten when hip, back and groin pain became to much. The absolute best thing I ever did for my quality of life. Back and joint pain went away, lost 15 pounds down to college weight and mind clearer. Try if for 6 months...easier than you think and you will be amazed.

    I switched to low-carb lifestyle 4 months ago, which means almost no carbs, which means no wheat, which means no gluten. Feel better, weight down from 225 to 185. Our species is not meant to graze on wheat, and didn't until 5,000 years ago. I'm glad I gave it up.

    Thank you for your TedX. As a Coeliac, others don't understand gluten free as a medical choice food as opposed to a fashion choice. So glad I watched this presentation.     I got diagnosed with coeliac about 6 years ago. A while later the do tor told me I needed B12 injections as I can’t absorb it from food. Lack of this vitamin can cause serious problems so please be careful if you stop eating bread. See a doctor and or dietician. At the very least eat plenty of oily fish/prawns/meat/eggs.

    And for some people it could be a gluten overload. When I simply paid attention to the food I was eating that contained gluten, I quickly realized I was overloading. I cut back, enhanced my whole-food plant based diet and my issues faded.

    Ditto. I seriously cut back wheat and added sugars. When I did my stomach issues greatly subside. I can get away with a cheat here and there but say I did a couple days in a row of cheating, or say a lot of it at once, boom my stomach is super bloated, and other things. I dont have to cut these thi gs out completely, but the less I eat of it the better I feel. As a kid I had allergy tests done. Those ski scratch things. Wheat came up as an allergen but I still ate it. Probably would have felt better had I not.

    I had digestive issues for many years and I was not aware that what I was eating was causing me harm. Every year I had more and more health symptoms more visits to the doctor & more sick days from work. I decided to read about the Elimination Diet and it helped me to realize that I was sensitive to certain foods & additives & preservatives. On the scale from 1 to 10 gluten causes pain at a level 10. Dairy causes bloating gas runny nose post nasal drip itchiness and wheezing at night. It doesn't matter what kind of dairy I drink if it's organic or Lactaid I still have symptoms. These are real issues for some people and if you don't have them and you don't understand what we go through. MSG causes migraines for me. I went from having the occasional migraine to having migraines three times a week or more and missing many days of work and having to leave work early. Weather I ate at my work cafeteria or I cooked meals at home that I thought were healthy the additives and the seasoning that contains MSG especially and Spanish food was the cause for my migraine headaches. And those migraines became so bad that I would throw up. I'm thankful for the Elimination Diet and videos like these

    Im testing this now. Same, i have migraines allergies, mucus, post nasal drip, tonsil stones, hypotiroid and so on. I ate raw vegan for 20 no migraines, ate bread migraines again. Same with dairy and mucus and allergies. It makes me aware of the importance of journaling foods and symptoms.

    I am apparently gluten sensitive -- my IBS is much worse when I eat it. I am lucky that I can get away with enjoying the occasional pizza or baked good with minimal effects, but I mostly just avoid it. Didn't seem to occur until my 40s....

    I have IBS too and eat gluten free products. There are gluten free breads, pasta, cake, biscuits, etc. You can buy it in the supermarket. Give it a try! 🙂

    Thanks for your comment. I also suffer from acne and I have cut out gluten for almost a month now. All the bump on my forehead have shrunk just 2-3 cysts left on cheek. I eat white rice though. I don't think there is any harm in rice since it's gluten free. What do you think?

    Judging by the audience you would've thought this was a stand up. All jokes aside I was diagnosed with celiac a few weeks back and the brain damage is real. I have had dizziness for months now and quitting gluten hasn't improved it. I am hoping my brain will recover because this fatigue and dizziness is quite debilitating.

    If you haven't tried already, try cutting out dairy as well. I'm currently gluten free, however was still getting nausea, fatigue and dizziness. I've done some basic testing, and it seems intaking a large amount of dairy at once (like on cereal or a bowl of ice cream) causes these symptoms the next morning. Lactase pills seemed to help with this for me.

    Using legos to explain the process is actually quite brilliant. As Einstein said, "If you cannot explain it simply, you do not understand it well enough." I was diagnosed with Celiac Disease 4 years ago, and ever since I stopped ingesting gluten foods, I have felt like a stronger and healthier person. And here's a freebie for ya - The U.S.'s first major crop that nourished many, if not most folks was Hemp. It was farmed all over the U.S. in the 1800's. Then came along Monsanto in 1901, and before you knew it Hemp crops were replaced with Wheat crops. Coincidence? Hmm?

    We honestly are so lost in this time of the nutrition battles. I find it absolutely crucial more research is done. All i want to know is "what do i eat to be and remain healthy". If the answers are still not clear for doctors, why should it be clear to any of us. All we are is a willing market for books in the meantime. It's a sad state of affairs, but eventually, we will get there together. Thank you for your efforts. They are much appreciated. I can't agree or dissagree with you. I just try different things. Unprocessed and homecooked seemed to have been my best choices sofar. I don't eat bread much to start with.

    What to do? Go watch a talk by Dr. John McDougall, M.D. or Caldwell Esselstyn, M.D. Both are doctors who advocate eating a balanced diet of fruits, nuts, seeds, grains, legumes, etc.

    pharma co's wont finance studies though because they are more interested in making $$$ from the latest DMARD or whatever bs drug. A lot of doctors are zombified by them as well, 80% of the immune system is in or around your gut, logic would dictate a lot of disease is caused by what you put in it. "auto immune" doesn't exist "ibs" doesn't exist, things happen for a reason (some times many) and making up silly labels because they cannot get to the bottom of a condition is not a pass!!.

    We are obviously All Different. Bread is my Best food in this world! Walmart French bread! It totally cured my IBS. It makes Perfect Poop. I tried living for a couple of years on nothing but salads and protein. With NO starches..at all. I was sick. We are All Different. I wish people would recognize that.     Wow! Thanks Dr. Ford, I heard about going gluten free and I just thought it was a fad diet. I didn't realize all the harm that could come from it. My mom suffers from arthritis and I am going to talk to her about going on a gluten free diet and seeing how that works for her. I am thinking about cutting it out as well. Brain damage and nerve damage is not something I want to have!!

    Thanks - gluten free is not a fad - it is lifesaving - This excess mortality in children was primarily because of an increased risk of death from accidents, suicide, and violence (seven deaths, SMR 3.22, 95% CI 1.29-6.63), cancer (five deaths, SMR 3.72, 95% CI 1.21-8.67), and cerebrovascular disease (two deaths, SMR 10.03, 95% CI 1.21-36.00). Children diagnosed with celiac disease had a threefold increased risk of long-term mortality. Am J Gastroenterol. 2007;102(4):864-870.

    Part of gluten problem apparently or probably due to how we process make bake bread. Home made easily tolerated when commercial breads are not. Gluten structure affected by time for yeast fermentation and additives used.

    I believe it is not just gluten causing the issues, but also the total of simple carbs (where basically wheat is the major source). simple carbs create strong addiction and makes it very difficult for most people to cut off but once tried, in a very short time you feel so well and the addiction wears off totally, very quickly. Cutting of simple carbs totally is the best thing you do for yourself. You will feel much better so fast that you will regret not having it done long time ago.

    +FrenzyHoes Self experience + being a GP myself, have been researching a lot on this. You can find several other doctors here on youtube supporting this. But I think best guide would be your own body and it is as simple as giving it a try for a few days only, right? Nothing to lose potentially a lot to gain. Many people I recommended this, tried and got very good results.

    Good point! I think it could be an improvement for most people to eat intact whole grains (including gluten containing ones, if people is not coeliac or allergy). Instead of refined wheat products, we could try eating barley / bulgur berries to make salads, sopus, stews, etc, as a part of a well balanced diet. Sorry for my english. Greetings

    I quit eating grains months ago as an insurance! I notice that so many people, without any special reason, start getting so frail and sick as soon as they closing in on 60 and beyond! I now believe its all about the damn bread/gluten!! My bodys response to quitting grains was that I have lost 7 kilos in 4 months and my digestion is better!!

    Four years gluten free for me with in the last 6 months I realized I was having issues with grains and cut down significantly. Everyone's body is different. I would encourage people to cut back on grains and try to eat as much fruits vegetables meats and nuts.

    I'm reading (listening) to the book "The AutoImmune Solution" by Myers. She talks about the same thing. I wanted to see if others were saying the same thing about gluten as she, and this is the first source I came across that confirms her ideas on gluten. Thank you for the talk Dr. Ford.

    (Copy and pasting from my response to a comment bc I’m feeling lazy af, sorry not sorry) Ate wheat fine for years, then around 19 I started getting sick. Foggy, fatigued, migraines, loose stool, and frequent bowel movements. It was so bad I was going to the bathroom 5 or 6 times a day. I cut gluten down almost completely after my doc told me I might be gluten sensitive, and now I feel so much better. No more migraines, I’m clearer, got more energy, and my gastro issues are down to almost non existent (I sometimes cheat 😅). On good days I have 2-3 bowel movements a day, way more in a normal range. Gluten is a protein. And many people have and develop protein allergies at any moment in their lives.

    What an amazing and inspiring talk! I will go gluten zero now,right now! Look at the golfer Jason Dufner, he is now gluten-free and look at his svelte golf physique. I hardly recognised him. My belly has been bloated since I started eating gluten products, but for a few months whilst accidentally eating no gluten, I achieved a bodyweight of 77 kilos, compared to 97 kg, 3 months before. I am looking forward to learning more from Dr Ford, and feel like I have found the solution to my problems.

    Rodney Ford My pleasure Dr.Ford. I notice that when I eat bread my belly bloats up and I generally do not feel energetic, but off it my energy levels seem to heighten. Now I am avoiding major carb sources, except vegetables, and it's wonderful. Gluten is a area that certainly requires more attention and publicity, for sure.

    Gluten has 2 properties - 1) undigestible and 2) has a glueing effect so it sticks to your insides so your body can't get rid of it - bad combination. If you stop eating it for 2 weeks you will notice a big improvement in your sense of wellbeing

    Yes, this is an anecdotal story, but: I have a rescue dog whose health has improved dramatically ever since I take care to give her food with ZERO grains (including no meat from grain-feed beef). She is 12 years old, but now she is as happy/healthy as a puppy -- a puppy with the knowledge and training of an adult dog. It can't be placebo effect with her ;)

    +zxy atiywariii Your dog is a different story. Dogs and Cats are carnivores. Humans aren't. Dogs and Cats are not meant to live on that nasty sub food called kibble. It's processed at high temperatures and then crushed into a shape. That is different then bread. As for humans, I think we need to stay away from these $1 bags of bread. They are crap made with gmo laced grains and have no life in them. Instead, we should be making our own sourdough breads as well as supporting sourdough bakeries to bring the healthiest breads to our family.

    +Mark Gailmor dogs are omnivorous scavengers, actually. And there's no evidence whatsoever that a meat-based diet is any healthier for a dog than a totally plant-based one. Just anecdotes going both ways. And grains are a different matter altogether, since that is the bastion of cooked food - and human beings are the only species on the planet that has evolved specific mechanisms for digesting cooked food.

    +Mark Gailmor agree with you except one point: there is no GMO wheat on the market. Corn (also a grain) commonly uses GMO stock. Funny since it's what many people consume as a gluten free alternative.

    ryacker Exactly and these people are consuming hfcs (high fructose corn syrup) in everything from ketchup to bread and blaming it on the bread. What about soft drinks? Pepsi and Coca Cola have hfcs in most of their drinks except kosher coca cola. But noo, it couldn't be something as simple as their adored soft drink, right? It must be the wheat because that's what the fat guy said who wrote wheat belly, right? LOL

    My hubby was having brain fog, and other issues. His VA (!) Doctor has recently strongly suggested that he cut out gluten from his daily diet. It is too soon to see results, but we are both good enough cooks, and experienced food shoppers to decide that this might be very wise. And we are going to try it.

    Tiredness is accepted by everyone as a normal part of hectic lives that we all lead now days. Repeatedly as my clients have dropped all white flour based products from their diet - without changing anything else in their lifestyle, have had immense increase in energy. This also eliminates most of the hidden high levels of sugar too!

    Crops have been sprayed up to 3 times in one growing season.....early in season to control weeds, mid season to control insects ,end of season to kill crop quickly to harvest before snow falls. Chemicals are in the plants, soils and all water systems.

    About 15 years ago I was bitten multiple times by a bug in Spain, My immune system went into overdrive and have had problems every since. I cut out gluten and boy do I feel better.

    I stopped eating animal proteins 3 days ago and feel a lot better in terms of fatigue, I'm going to try that in combination with eliminating gluten. Lots of beans, oatmeal, rice, nuts, veggies, and peanut butter for me.

    dfdfdgg gjhjjh Have you tried looking into the Elimination Diet to see which foods you are specifically sensitive to? I did that years ago and it has helped me immensely.

    Rice is naturally gluten free that's why Celiacs like myself can eat rice. Know what has gluten before considering going on a Gluten Free diet. Personally I don't know why anyone would want to go on a Gluten Free diet unless they have Celiac or non Celiac Gluten sensitivity .

    I tried a gluten free diet along with my husband and son who has high functioning Autism, it made absolutely no difference to us, energy or mind function however if it works for others good for them and I would not tell anyone to stop unless they wish to try and see if it helps and if it does great for them

    Just try it & see....what is the harm? Once I went gluten-free I didn't nap as much, I wasn't as easily agitated, & my achiness improved. Whenever I ate gluten (let's be honest, it's about 80% of the grocery store) I would get a sense of tired confusion....I called it "jiggly-brain" because it honestly felt like my brain was jiggling. I could not sort out the source, because gluten is everywhere (do you know some rotisserie chicken has gluten in it?). I thought I was just doomed to eat and suffer, eat and suffer. I am much improved & almost never nap anymore.

    I’ve been gluten free for about 6 months and wow, what a difference! I was sick bi-weekly and also daily diarrhea! I also got very mean after eating processed food contained gluten, it’s nice to not have a negative chemical reaction each time after eating.

    It would be interesting that somebody studied the relation between low radioactivity and allergies. Gluten and lactose suffer small changes that make the body react as a strange meal.

    olekike today,s soft wheat used in most baked products are very high in gluten...read the books he mentions. I developed problems...friend suggested I read Wheat Belly...I saw a holistic dr who said...do your own trial...eat pasta, crackers, buns etc...note your intestinal inflammation, diarrhea, and aches...then cut this all out. If there is a change..well...there ya go. It made ALL the difference...

    -- people who do not have celiac disease respond poorly to gluten -- NO ONE can digest gluten (it's a protein that our body cannot break down) -- EVERYONE has an inflammatory response in the gut to gluten (the protein is similar to a chemical messenger that tells the pores in our intestinal lining to open [leaky gut], which is how it gets into the bloodstream. And because it is a foreign body in the bloodstream, it provokes an immune response) -- nerve damage caused by gluten is likely the most widespread consequence of gluten consumption, which largely goes undiagnosed

    I would be interested to hear more about HOW we grow these crops (GMO's, pesticide or fungicide use, etc.) contributes to wheat intolerance and celiac. Were so many people always so sick from eating bread and we are just now discovering it? I am GF also and have autoimmune issues, so I personally relate..but I feel like there is more to it that we don't have down yet.

    I was having trouble with iron deficiency. It got bad enough that I had to have two rounds of infusions of iron. No cause could be found. I was tested for internal bleeding with no cause found. The test for Celiac was inconclusive. Finally on my own I started avoiding gluten. My iron levels rose with no extra vitamins or other adjustments. I am able to donate blood again. I don't know why it is an issue, but for me gluten means my digestive system does not absorb vitamins.
