DAGESTAN Grandma making WATERMELON HONEY. Dagestan village life
Grandma making WATERMELON HONEY. Dagestan village life
Watermelon honey, refined and strongly evaporated juice obtained from the pulp of ripe watermelon fruits. It has a honey consistency, brown color, sweet taste and contains at least 60% sugar. The pulp is separated from the crust, rubbed through a sieve and squeezed out the juice. After filtration, it is boiled, removing the foam, then evaporated 9-10 times. To obtain 1 kg of watermelon honey, 16-17 kg of sweet watermelons are required.

The word "simple" about this life doesn't really sound right to me. The knowledge and skills involved to be self sufficient, are way more than most of us will accumulate to survive. In a society were we just go and buy a bottle of syrup made in a factory. We have lost so much knowledge in just a couple of generation's. I would love to learn from the elders there. ❤️

Sou do Brasil nunca ouvi falar de mel de melancia. Amei a receita. Trabalho maravilhoso. Parabens
The recipe is extremely old and I have the impression that it was made all over the world where melons could be grown. I remember my great-grandmother telling me once about the preserves and jams and molasses her mother used to make when she was still a child, and among other things she mentioned this melon honey. Only she added that they boiled this juice over a very, very low heat until it became viscous just like honey. And this in a ... "very European" country.
