ദോശയും രണ്ട് ചമ്മന്തി കറിയും | Red & White Coconut Chutney | Kerala Style Dosa
Ingredients
Raw rice - 2 glass.
Urad dal - 1 glass.
Salt to taste.
Bird’s eye chilies
Shallots.
Coconut oil.
Mustard.
Curry leaves.
Dried chilies.
Method
1)Soak urad dal and rice in water.
2)Once the urad dal and rice are soaked, grind to make a keep it for fermenting overnight. Once fermented season with salt.
3)Use a flat pan to do the dosa.
4)For the chutney, Make a paste of bird’s eye chilies, salt, and grated coconut. Heat a pan with oil, splutter mustard seeds, saute in shallots, dried chilies, and curry leaves. To the sauteed shallots add the paste with little water and bring it to boil. Remove from flame.
5)For the second chutney, make a paste of dried chilies, grated coconut, ginger, shallots, and salt. Heat a pan with coconut oil, splutter mustard seeds, saute in shallots, curry leaves, and dried chilies. Add in the paste with little water and bring it to boil. Remove from flame.

തയ്യാറാക്കുന്ന വിധം
1.ഉഴുന്നും പച്ചരിയും വെള്ളത്തിലിട്ട് കുതിർക്കുക.
2.കുതിർന്ന പച്ചരിയും ഉഴുന്നും അരച്ചെടുത്ത് പുളിക്കാൻ വക്കുക. പുളിച്ച് വന്നാൽ ആവശ്യത്തിന് ഉപ്പുകൂടി ചേർക്കുക.
3.ദോശക്കല്ലിൽ എണ്ണയൊഴിച്ച് ഓരോന്നായി ചുട്ടെടുക്കുക.
4. ചമ്മന്തിക്ക് ഉപ്പും കാന്താരിയും അരച്ചെടുക്കുക. അതിന്റെ കൂടെ തേങ്ങയും കൂടെ ഇട്ട് അരക്കുക. ശേഷം ഉള്ളിയും ഇട്ട് അരക്കുക. ചൂടായ ചട്ടിയിൽ വെളിച്ചെണ്ണ ഒഴിച്ച് കടുക് പൊട്ടിക്കുക. കറിവേപ്പിലയും ഉള്ളി അരിഞ്ഞതും വറ്റൽ മുളകും ഇടുക. ശേഷം അരച്ചുവച്ച ചമ്മന്തിയും വെള്ളവുമൊഴിച്ച് തിളക്കുമ്പോൾ വാങ്ങുക.
5.വറ്റൽ മുളക്, ഉപ്പ് എന്നിവ അരക്കുക. പിന്നീട് തേങ്ങ ചേർത്തരയ്ക്കണം. ശേഷം ഇഞ്ചി ഇട്ട് അരയ്ക്കണം. അതുകഴിഞ്ഞു ഉള്ളിയും അതിന്റെ കൂടെ ഇട്ട് അരയ്ക്കണം. ചൂടായ ചട്ടിയിൽ വെളിച്ചെണ്ണ ഒഴിച്ച് കടുക് പൊട്ടിക്കുക. കറിവേപ്പിലയും ഉള്ളി അരിഞ്ഞതും വറ്റൽ മുളകും ഇടുക.ശേഷം അരച്ചുവച്ച ചമ്മന്തിയും വെള്ളവുമൊഴിച്ച് തിളക്കുമ്പോൾ വാങ്ങുക.

When we were children we used to help our grandmother in grinding dosa in these stone grinders.attukal .and of course chutneys too in those ammi kals Her cutting skills are amazing Great!
