Punugulu is a popular South Indian street food made with deep-fried dosa batter balls. Here's a simple recipe to make Punugulu using dosa batter:
Ingredients:
- 2 cups of dosa batter (fermented)
- 1/4 cup chopped onions
- 1/4 cup chopped cilantro
- 1/4 cup grated carrot
- 1/4 teaspoon cumin seeds
- 1/4 teaspoon mustard seeds
- Salt, to taste
- Oil, for deep-frying
Instructions:
1. Heat oil in a deep frying pan or a deep fryer to 350°F (180°C).
2. Add cumin seeds and mustard seeds to the oil and let them sizzle for a few seconds.
3. Add chopped onions, cilantro, carrot, and cabbage to the oil and sauté until they are soft.
4. Add the dosa batter to the pan and mix well with the sautéed ingredients.
5. Using a small ladle or a spoon, drop small balls of the batter into the hot oil, about the size of a small lemon.
6. Fry the punugulu until they are golden brown and crispy, about 3-4 minutes.
7. Remove the punugulu from the oil with a slotted spoon and drain excess oil on paper towels.
8. Serve hot with chutney or sambar.
Tips:
- Use a fermented dosa batter for the best results.
- Adjust the amount of onions, cilantro, carrot, and cabbage to your liking.
- Don't overcrowd the pan, fry in batches if necessary.
