Here are the ingredients you'll need for this #glutenfree one pot dish.
3-4 lbs chicken
1 1/2 tablespoon Caribbean Green Seasoning
3/4 tablespoon salt
1/2 teaspoon black pepper
1 1/2 tablespoon Curry Powder
1 teaspoon Worcestershire Sauce
1 med onion
1 med tomato
1 1/2 tablespoon golden brown sugar
1 tablespoon oil (I used olive)
1 teaspoon grated ginger
1 1/2 cups coconut milk
6-8 cups water
2 1/2 cups long grain par-boiled rice
1 scotch bonnet pepper
2 pimento peppers
2 tablespoon chopped shado beni (culantro)
1 stalk celery
1 medium carrot
1 can pigeon peas (1 1/2 cups)

I wish when people dislike a video they had to explain why because I be trying to understand what happened lol You are so informative. I own your cookbook and I've been watching you for at least a year now. I have loads of recipes saved and haven't made not one. A shame lol I think I'll force myself to start with this one

Some people do not wash rice. I don't all the time. Is more important that I wash and season the meat very well.

I tried your curry stew chicken pelau today. It came out really good! Thank you. I usually eat curry or stew separately but this was an eye-opener! Instead of the coconut milk I put coconut oil and I put salted pigtail and smoked bones with the chicken to stew down. This is a keeper! Thanks again..

You're a great chef, most people over wash their meat. I learned that from my 10 year old
Thank you Chris for this awesome recipe. I didn't have to add any additional water because my liquid never burned off. It may be due to using a stainless steel pan. I also allowed it to cook in the oven on 350 for 30 minutes and it came out PERFECT🤩 I'm serving this at church celebrating various cultures, Tastes of the Nations. I love cooking Caribbean food; my maternal great grandparents were from Port of Spain, T&T

Chris, here from London. Thanks for NOT using seasoning powders. I just hate to see all those Caribbean cooks thinking that is a great idea, no. None of the world's best chef mess with season salt, onion, garlic, etc. For one thing, the taste is different. Those packets are also filled with bi-products. Those Caribbean cooks who go this route, all their foods taste the same. Love your style, that's how my mammy cooked. Thanks Chris.
Love this Recipe- who is asking about the seasoning??? You can see it in all the FRESH ingredients peppers, tomatoes, onions peppers etc.. added to marinade the chicken before cooking. I was born in the PNW and know this. Maybe b/c my mom was raised in the south. Oh My! I had no idea some people don't wash their rice?

I just made this. Tastes good, but mine never turned brown! Browned the sugar and everything. Looks like a big one pot curry chicken and rice. Not complaining tho. Me and this pot of food shall love on each other for the week.

It’s a general seasoning that Trinidadians use. It’s made up of chives, Charon Beni (culantro) , pimento (flavoring ie. no heat) peppers, garlic, fine thyme. Add ons can include hot pepper, Spanish thyme, celery. This is the basic seasoning used on meats. It’s blended up and mixed with the raw meat before cooking.
I've made a few recipes that call for using brown sugar to colour the chicken, but I can never seem to get the technique right. The moment the cold chicken hits the pot, the sugar solidifies instead of coating it, then it puts out so much liquid it takes an hour to get it to evaporate. Once I get the liquid evaporated I can sort of begin to get the colour, but the chicken gets far too overcooked and begins to become pulled chicken in my pot. Still delicious! Maybe I just need a wider pot?
