Hello.
I'm Boone Bake.
Today I made cheesecake after a long time.
This time, I made the cheesecake in a slightly different way.
If you make it this way, you will be able to make a richly flavored cheesecake.
It's not about adding any special ingredients.
I did it a little differently.

I really liked the rich cheese flavor and the lemon flavor.
And I made Chocolate PAIN DE GÊNES.
There is an ingredient that connects the chocolate PAIN DE GÊNES with the lemon cheesecake.
If you try it, you'll understand why they used it.
It can be a bit complicated as there are several processes, but it doesn't require difficult techniques.

● Cup measure standard
237 ml = 1 cup
15ml = 1Tbsp
5ml = 1tsp
1 egg (without shell) 53g
Heavy Cream (35% milk fat)
(Chocolate is minced, flour is before sieving)
♥ Pickled Lemon
1 lemon (60 g without peel)
30g sugar (2Tbsp+1tsp)
Food coloring (optional)
♥ Lemon cheesecake finished size
[ 18cm * 5cm (height) ]
140g cream cheese (2/3 cups)
30g sugar (2Tbsp+1tsp)
1 yolk (14 g)
3ml vanilla extract
30g sugar (2Tbsp+1tsp)
35g unsweetened yogurt (2Tbsp)
5ml lemon juice (1tsp)
1 lemon zest
3 g (1 tsp) gelatin
140g heavy cream (1/2 cup + 1 Tbsp + 1 tsp)
(50% whipped)
♥ Lemon Cream
1 egg
35g Lemon juice (for 1 piece)
10 g (2 tsp) water
40g sugar ( 3Tbsp )
pinch of salt
7 g cornstarch ( 1 Tbsp )
Lemon Liqueur 3ml (Lemon Dijon)
lemon zest 1
1 g gelatin (1 tsp)
25g unsalted butter (1Tbsp+2tsp)
● Chocolate PAIN DE GÊNES
1 egg
40g sugar ( 3Tbsp )
Dark rum 5g (1tsp)
5 g honey (or glucose)
2 egg whites
50g sugar ( 4Tbsp )
60g almond powder ( 1/3 cup + 1 tsp )
15 g cornstarch ( 2 Tbsp )
15 g all-purpose flour (2 Tbsp)
10g cocoa powder (1Tbsp+2tsp)
55g unsalted butter ( 1/4 cup )
♥ Apricot Syrup
10 g apricot jam (2 tsp)
20g water (1Tbsp+1tsp)
♥ Lemon Jelly
40g hot water (2Tbsp+2tsp)
3 g lemon juice
8 g sugar (2 tsp)
3 g gelatin (1 tsp)
Food coloring (optional)
♥ Apricot Jam

Hello I love what you make 😻 When I'm making macaroons I don't know what happens 😥 : The macaroons don't swell and the outer layer cracks, and sometimes the macaroons stick to the cooking paper and spoil the bottom surface, and sometimes the kernels become very hard even though their color is natural Please please make a video about what should be done so that we do not fall into these mistakes or similar mistakes Also I would like to know .. Is it possible to replace almond flour with wheat flour (regular flour) and do we adhere to the same ingredients and method of preparation in the almond recipe Sorry for the length but I trust that you can help
