Cuban Style Fricase de Pollo | Pollo Guisado | Chef Zee Cooks

Today we’re making Fricase de Pollo Cubano, which is a Cuban Style Pollo en Salsa. Think of this as a chicken stew and the Cuban version of Pollo Guisado. The bone in chicken is marinated with limes, oranges, and fresh garlic. We then brown the chicken and slow simmer it in a tomato sauce that’s out of this world. The best part is that we add potatoes to the chicken stew so it makes this dish hearty, delicious, and comforting. It’s an inexpensive dish that is perfect for dinner with friends and family!
Ingredients:
2lbs Bone-in Skinless Chicken (Thighs & Drumsticks)
1 White Onion
¼ Green Bell Pepper
¼ Red Bell Pepper
Kosher Salt
Black Pepper
2-3 Bay Leaves
1 Lime
1 Orange
4-5 Garlic Cloves
1 tsp Paprika or Ground Annatto
1 cup Tomato Sauce
1 cup Dry White Wine
½ cup Spanish Olive & Capers
3 Potatoes Cubed Medium Size

    Chef Z thank you so much. I just made this fracasé de pollo and it turned out oh I don't know 100 times better than I thought it would. Mind you, I've made this before but ... chef Zee was there to show me how. Now my wife thinks I'm a chef !! Shhhhh don't tell her I'm not.

    Yay!!! I love fricase!! Reminds me of all the family gatherings from when I was younger and then the dominoes clacking in the domino table with Cuban coffee aroma in the air. This dish brings back so many great memories. I will definitely recreate!! Thank you!!

    Interesting in Louisiana creole culture we also have chicken fricase almost identical to this. Must be the Spanish blood in us. This looks amazing! your doing the dayum thang girl go zee!!

    Fricase is French in origin! It's just that French cuisine had a lot of influence on the Latin Caribbean

    I just made this for my family. It’s delicious! I do add a little oregano, cumin and chicken broth in addition to the vino seco. I cook it slowly until the chicken is fork tender. I add the potatoes at the end.

    looks delicious! there's another dish i've had in dominican places with stewed spare ribs (in tomato sauce??) that is oh so delicious and fall-off-the-bone tender. Would love to learn how to make that!

    I made it for dinner it was so good.,I tweaked it a bit I used half a cup of cooking wine, added a cup of water , I used paprika, and added a bit of sazon con achiote , also added a carrot it came out delicious. Thank you

    oK I JUST MADE THIS! I have not tasted it yet but letting it cool down. I noticed it is very liquid-filled on my pan. Is it supposed to have a lot of liquid or was it supposed to evaporate? I left it covered after adding the chicken back in.

    Use chicken broth. Furthermore, although wine is used the alcohol burns off.
