CRUNCHY BARK BRISKET FLAT ON SHIRLEY OFFSET SMOKER TEXAS BBQ

Hello everyone, I have this choice brisket flat. I am going to season it with meat church holy gospel and cook it on my Shirley Fab offset. I will shot for 250 - 300 degrees using a mix of hickory and oak wood.
I will wrap with butcher paper once I get a nice bark. I won’t pull it until it’s probe tender.
It turned out a little dry. It was my fault I over cooked it. I eat a lot of it and I also made a home made beef vegetable soup with it that turned out great.

    Brisket came out nice, bark staying on meat not flaking off. Shirley Impressive, especially the 3/4 inch fire box door. You also the do the nicest wrap.

    Thank you, honestly I over cooked it a little. It was a little dry but still very flavor full. If you look at my videos. The next video is me using the brisket left overs to make a beef vegetable soup in the crockpot. Thank you for your comment and support!

    Just ran my first brisket in a new Shirley. I did the full packer though and it was long cook. Still working on my fire management.

    Yes, briskets and buts are long brother. I run a little hotter than transitional. I run 275 - 300 degrees. And it cuts a little time and in still get great quality bbq. Thank you for your comment!
