Crispy Smoked Wings on the Pit Boss Platinum Lockhart pellet grill!

I've tried a lot of different ways to get crispy skin on smoked wings, and I finally nailed it! I'll show you how in this video.
Simply toss wings in baking powder & salt, cook at 250 degrees F for 30 minutes, then flip and crank the heat to 425 degrees F, then check the internal temp and flip every 20 minutes until temp reaches 175 degrees F. I only had to flip them once before they were ready! Then sauce both sides and allow to cook about another 2-3 minutes and boom - crispy wings!
I used the Pit Boss Trophy Blend wood pellets for this cook - they are incredibly versatile and make any food taste delicious! Link: pitboss-grills.com/Shop-Pit-B...
For the sauce, I used Melinda's Cayenne-Habanero Wing Sauce and it did not disappoint! Link: amzn.to/3hYAo4a

Congratulations!!! You are one of the few that realizes that baking powder is the only way to get crispy chicken wings!!

😂😂😂 thanks! Though it definitely took a lot of trial and error (and rubbery wings) to figure it out!

Awesome to hear! It took a lot of attempts and a lot of failed, rubbery wings before I got it right so I’m happy it worked for you!
That’s how I usually do my wings. Just my .02, if you have the time to put them uncovered on a rack in the refrigerator for a few hours, the cold dry air really dries out that skin and they come out even crispier

Do you still use baking powder after letting them dry out in fridge??
@jackwebb5917
Жыл бұрын
@@blakeholland21 I do, I also dry brine while they’re in the fridge. I mix kosher salt and baking powder in a ziplock bag and coat the wings. Shake off the excess and put on a drying rack (so air can flow under the wings) and then on to the fridge preferably overnight but even a few hours will help

Thanks for the content!! I’ve used the baking powder but not quite in this way, but I will give it a try!! How would you do this along with a dry rub?
@HolySmokesBBQ
Жыл бұрын
I would get them in the smoker and then once they start to develop a nice color, spray them with some cooking spray and apply your rub. Should be awesome!

Looks good. I use corn starch. Wondering if there is a diff if I use baking powder?
@HolySmokesBBQ

I tried corn starch a while back and they ended up just a bit “grainy” for my tastes. I may have just done it wrong though. Long time ago!

Why did you choose not to open and use the sear plate? Just wondering.

Mostly because I didn’t want them charred, just crispy. Great question and thanks for watching!
No washing or rinsing the chicken?
@HolySmokesBBQ

No, in this case a good patting dry did the trick.

@@HolySmokesBBQ I always wash my poultry. That being said. I'm using your methos today. Came back here for a refresher. I grill/air fry/ stir fry Wok a lot and always look for different ideas. Nice work from your brother from another mother. I have a campchef and thinking about moving to a Pit Boss.

White people never wash chicken before the cook it.
I also like using the whole wing. Less flipping.

Your wings look amazing and I'm not taking anything away from what you did but I want to see you do a video on these wings...watch this video kzread.info/dash/bejne/hGGgz5R9n6esfLQ.html. I watched the video and recreated the wings like Ry did and OMG! You have to do a video on these wings, like I am going to do, and tell me and your subscribers what you think. I smoked these wings to the "t" of the video with all the sauces and wow! You and your subscribers won't be disappointed guaranteed. You'll thank me for it - so delicious! I'm really loving what you do on your channel my friend.
Good video but the lighting was not good..waayy too light. Couldn't appreciate the color of the wings. Otherwise good video.

Just made these wings not the best. Taste nothing but baking power. Even with franks hot wing sauce not my fav.

Sorry to hear that. You definitely want to cook them long enough for that powder taste to dissipate.
Turn your saturation down brother. Chicken wings were bright white, couldn’t read the sauce bottle..
