Mmmmm, this is a great idea. I don't drink alcohol anymore so I have a bottle of Smirnoff just sitting on the shelf. Think I'll use it for something like this, with some whole wheat pasta.

I'm pretty sure between setting it on fire & then more simmering, the alcohol is cooked out. But you're left with the flavor.

I think if you don’t want to use the flame, you can just boil it a few minutes and the alcohol will boil off.

Just a small safety thing - if you're not experienced cooking with alcohol: please do use a long lighter, do not keep your face near the pot (you saw that fireball), and especially with colorless liquor bare in mind that even after the visible flame dies off there can be an invisible flame. Just give it a moment or a quick test.

The alcohol burned off during cooking but they may have been high off the leached aluminum from cooking tomatoes.
Maybe I over season but I use way more salt when I cook.
tomato paste before the sauce would be better

When you’re cooking a vodka sauce the alcohol with naturally evaporate while cooking the onions. Just keep it at a low simmer.

It burns off when ignited. There is no alcohol left in that sauce, only flavors. This man was a top chef in an Italian restaurant for a couple of decades. I think he knows what he's doing.
You're supposed to take a couple huffs of the boiling vodka mixture before you light it lol rookie mistake
