Creamy Southern Chicken Spaghetti with Rotel | Comfort Food | Restless Chipotle
The creamiest cheesy chicken spaghetti recipe ever with just the right amount of spicy Rotel tomatoes!
It's a great way to use up leftover chicken, too!
This easy casserole is ready in just 30 minutes and can be assembled a day or two ahead of time, or frozen for up to 3 months, and baked when you're ready to eat.
It's a must at potlucks - great way to feed a crowd or a hungry family for cheap!

1.5 pounds boneless chicken breast, or more if desired cooked and shredded or cubed
16 ounces spaghetti, broken in 2-inch pieces
29 ounces cream of chicken soup, (2 - 14.5-ounce cans condensed)
10 ounces diced tomatoes & green chiles (I use Rotel tomatoes)
6 ounces cream cheese (I use Philadelphia brand - and recommend it)
3 cups Cheddar cheese, shredded from a block - divided use (12 ounces total)
¼ cup heavy cream, you can use milk if you prefer
1 cup bell peppers and onions mixed
Instructions
Cook the chicken breast if it's raw then dice or shred it and set aside - or used cooked rotisserie chicken.
If using fresh onions and peppers saute them in a little butter until soft.
Break the spaghetti into 2-inch pieces and cook until tender in boiling, salted water.
Drain and set aside.
Mix the soup, RoTel, and cream cheese in a microwave safe dish.
Heat, stirring every minute, until the mixture is smooth and creamy.
Stir in 2 cups of the cheese.
Stir until smooth. You may need to add some milk or cream to thin it down if it seems too thick.
Stir the cooked chicken into the cheese mixture.
Stir the pasta, onions and peppers into the chicken and cheese mixture.
Spoon into a greased 13x9-inch casserole dish.
Top with remaining 1 cup cheese.
You may stop here, cover with plastic wrap then aluminum foil, and freeze for up to 3 months or refrigerate a day or two until ready to bake.
Bake at 350F 20 minutes or until heated through and the cheese has melted.
Remove from the oven.
Let stand for about 5 minutes for the cheese to settle then serve hot.

Adelaide, South Australia; Australian here....I too always break the spaghetti in to about 3 or 4 divides....I also do it when it is still in the package just makes it easier and less mess....

for video I do love a silicon spoon to scrape on glass bowls and to dig out cream of chicken soup from cans.
This looks delicious with the addition of the Rotel and the fact that you seasoned the chicken well. I think jalapenos could be a tasty add-in for a little bit of heat. I will be making this for an easy Sunday dinner. From one Texan to another Texan, thank you for sharing! 💖

Never had this before, however I am going to make it looks delicious 😋
I got the ingredients today to make chicken spaghetti and looked up a video to see if I had all the right stuff lol. Came across this video and GOOOOD LORT!!!!!!! 🤤🤤🤤🤤🤤 I'm getting dinner started now so it's ready to go. This is one of my FAVORITE dishes!!!! And yes, this fellow Texan breaks the pasta in 3rds too. 😂😂😂😂 only for these type dishes though. I leave it normal for regular sketi.

i break mine in 3s, yes it’s easier to eat🎉 love chicken spaghetti … I have to make mine gluten free so I have to make my own cream of chicken mushroom soup, and a grain free pasta, I’ll be using cassava flour pasta by Jovial

Made it! Put the wrong bag of pulled rotisserie chicken in the mix (resulting in half the needed chicken)....still awesome.

I have and sometimes I make it that way but this is my favorite. :)
I’ve made this for years and add sour cream instead of cream cheese and I use velveeta cheese. My recipe was given to me back in the 1980’s from a south Texan woman.
You guys are so funny. But the recipe looks great I can almost taste it though the phone ❤😅🎉

Back in the day I boiled the chicken and then cooked the spaghetti in the broth. This recipe came out in the late 80’s

I was taught to boil the water first an to never put salt in cold water in a silver pot. The salt will ruin an your pot will be pitted on bottom. I break the noodles cause I like the noodles to be covered in water an easier to stir.

Aluminum will pit. Stainless steel and enamel won't.
They break the noodles so it is easier to incorporate the ingredients.

It's spaghetti, so why do you call it noodles?
I am curious I have noticed in many TV shows etc that Americans often use paper/disposable plates. Can anyone tell me if this is a normal regular thing in the US ?
