6/12/2023 Little late to the party here .... like by 2 years ... but just made this just as described..... including the Mexican oregano and cilantro. It is wonderful! Probably one of the best KZread recipes I've come across. In spite of the jalapeños (I thought it would be hot) ..... it's mild and full of flavor. Thank you Outdoor Indoor Texan!

Oh my goodness! Thank you! You’ve gained a follower! This is exactly what I was looking for…I’ve seen a lot of green salsa recipes and have made many batches of green salsa and could never get them to taste just like the ones from the taco trucks. You highlighted ALL the things I was doing wrong-the type of oregano, I was adding dairy, I used olive oil, I used white onions! All the recipes I saw used avocados and tomatillos and so it would always come out thicker than I’d like so I’d add more milk or water sometimes. So thank you! Can’t wait to try this today!

I've had many versions of this sauce and have never had a bad one. Thanks for sharing yours. I fry my vegetables in the oil and add some tomatillos too. So long as you cook the onion, white and red are preferred by me. I usually cook the garlic to mellow it out a bit, but raw is good too. Try a scoop of chicken bouillon next time. So good!

I've made this multiple times over the past couple of years. A few changes I've made that i think improve it: Add a poblano and an Anaheim, if you can find one. Or two poblano. It adds depth of flavor instead of the one note of jalapeño. And i turn the cast iron to medium high to high and cook till the veggies have tons of color. This, again, adds a lot of depth to the flavor. Almost always, i add extra cilantro. Lol I always make at least a double batch. Right now it's quadrupled and in my 13" cast iron because I'm making extra to give some friends who are visiting soon. They adore it.

Excellent sauce and great video thanks! I do mine a little differently in that I add a couple of Serrano Chilies to the pot, use fresh lemon juice instead of lime and use avocado oil that I get at Costco for a healthier alternative to canola oil. I do boil my jalapeños and onion because it’s faster and makes clean up easier!

Try substituting fresh lemon for lime too. We live in Baja so we use a lot of limes down here but lemon really does taste better! It gives the sauce a bright citrus note without the slight bitter taste you get from limes. The Serrano’s also add a nice complexity to the sauce and only increase the heat a little bit.

I have in the past but personally prefer limes 🤷‍♂️. That’s the fun of recipes like these though, you can substitute and tweak like crazy. I have a completely separate recipe for a green Serrano hot sauce you should check out if you’re a fan of those peppers.

Happy to hear the feedback! As far as today’s problem, the sauce thickens up and/or separated when it sits in the fridge. Leave it out to warm up try it then maybe with a quick whisk. If still thick, you can always blend it again. Should be back to normal.

If you want to reduce the spice for the future, split the jalapenos and seed half to 3/4 of them and then slice and cook. Most of the heat is in the seeds so minimizing the amount of seeds minimizes the heat. You could also sub some of the jalapenos for a milder pepper such as Anaheim or poblano, either of which has a more complex flavor than jalapeno, imo. But they are also milder so that will reduce the sharp bite of the sauce.
