Chicken and Dumplings Recipe
Ingredients:
▪6 boneless, skinless chicken thighs
▪Salt
▪Black pepper (approx. 1 tsp, divided)
▪300g (1 large) white onion, medium diced
▪150g (3-4 stalks) of celery, medium diced
▪150g (3-5 medium) carrots, diced
▪150g (1 medium) fennel bulb, chopped
▪20g (4-5 cloves) garlic, pressed
▪115g (1 stick) butter
▪135g (1c) all-purpose flour (or sub with cup for cup gluten free flour)
▪100g (1/2c) dry white wine
▪1200g (5c) chicken broth
▪100g (1/2c) heavy cream (or 400g milk and only 800g of stock if you don’t have cream)
▪3-4 sprigs thyme
▪2 bay leaves
▪2g (3/4t) poultry seasoning
▪200g frozen peas
Dumplings:
▪360g (3c) all-purpose flour
▪8g (1 2/3t) coarse salt
▪12g (2 1/2T) baking powder
▪4g (1 1/2t) black pepper
▪75g (5T) unsalted butter, melted
▪340g (2 1/4c) whole milk
Instructions:
1.Preheat the oven to 400°F (205°C).
2. Season both sides of the chicken thighs with salt and black pepper. Roast in the oven for 30 minutes or until fully cooked and fat is rendered.
3. While the chicken is roasting, dice onion, celery, carrots, fennel. Press garlic cloves.
4. In a large heavy-bottomed pot over medium heat, melt one stick of butter. Add diced vegetables and garlic, a pinch of salt, and sweat for 6-8 minutes, stirring often. I'm using a 6 3/4qt dutch oven.
5. Stir in all-purpose flour to create a roux. Add wine, scraping the bottom of the pot to deglaze. Cook for about 30 seconds.
6. Add chicken broth, heavy cream, thyme, bay leaves, and poultry seasoning. Stir well.
7. Chop the roasted chicken thighs into small bite sized pieces and add to the pot over medium heat along with frozen peas. Stir and simmer on low for 5 minutes to reheat chicken and peas, scraping the bottom of the pot as you go.
8. In a separate bowl, mix the dry dumpling ingredients: all-purpose flour, salt, baking powder, black pepper. While mixing, stream in the melted (but not hot) butter, and milk and continue stirring until just barely combined.
9. Taste the chicken gravy mixture for seasoning and adjust with additional salt if needed.
10. Back to the dumpling dough, using two teaspoons, quenelle the dumpling dough and drop 12-16 dumplings into the pot.
11. Lower the heat to low, cover with a lid, and cook for 15 minutes or until the dumplings have expanded and cooked through.
12. Test a dumpling for doneness by cutting into it; it should be fluffy and cooked through, not gluey.

    Chef, the morning you posted this I asked my 73yo grandma what she wanted for dinner. Before I even saw you posted this she told me chicken and dumplings! Tonight I made this for my grandparents, mother, and my girlfriend. My grandma who doesn’t eat a whole lot ate TWO bowls.     My grandmother made chicken and dumplings and it was a family recipe using a whole chicken but no peas. The dumplings were made using Bisquick, set a timer and don’t lift the lid! There is probably a recipe on the Bisquick box even today. When I saw you cut into that dumpling it was perfection. Thanks for the memory.

    In the swedish speaking part of Finland we call it ”klimpsoppa”. We make it with beef though and often put raisins in the dumplings. 😋

    Yeah this version is basically like a pot pie. Usually chicken and dumplings is just gravy/broth with chicken in it and then the dumplings. Like a whole chicken gets boiled to cook it and make your stock then its pulled from the bone and shredded, stock reduced and tickened ro your desired consistency and dumplings dropped in to cook. In the deep south states they make these big ass thick square shaped noodles and call those dumplings. It's really chicken and noodles though. Real dumplings are just like these in the video.

    Yes, I agree..in fact, there are several brands of flat egg noodles that are marketed as “dumplings.” All these alleged “experts” on southern dumplings don’t know what they’re talking about, as most of them are describing noodles, not dumplings, and why can’t someone have an interpretation that’s slightly different without it being deemed “wrong,” which it certainly is not?? This is certainly pot pie influenced, but pot pie crust uses oh, what is it, cornstarch I believe for that crumbly texture. If it’s delicious and has floury, fluffy, rich “dumplings” on top, why can’t he call it dumplings? Geez..ppl are so intolerant lately..@@Appalachianasshole41

    YES! Finally another cook who uses poultry seasoning in their soup! I’ve been using it for years and it takes ordinary chicken soup to the next level, with just a hint of thanksgiving stuffing flavor. This is almost exactly how I make my chicken and dumplings, perfect for a snowy evening. 😊

    You really hit a nostalgic nerve with this one, Brian. I loved my mother's chicken and dumplings. All I wanted was a bowl of her light-as-air dumplings, forget the chicken and whatever else she put in. I never got the recipe from her and she passed way too young. I'll be making your recipe soon.     I can't love this enough. I grew up on chicken and dumplings - the hen was pulled from the barn yard and into the pot on the wood stove. I make my own updated version that includes - wine and poultry seasoning 😀 I also add a pinch of sage and poultry seasoning to my dumplings. I've never made it with cream, I may have to try it.

    This brings back precious memories of my late great grandmother and late grandmother (mother and daughter) making chicken and dumplings in the 1970s and 80s. They cooked fresh chickens from their back yard and vegetables from their neighbors' gardens. These two phenomenal women made blankets from those old foot pedal sewing machines and the best homemade biscuits and cinnamon rolls. I was the one always in the kitchen watching, tasting, and learning how to cook without measurements. Great recipe Brian!

    I was going to comment exactly the same. I loved my grandmother's version when I was a kid. There were carrots and probably celery and onion, but hers included sliced hard boiled eggs and did not have green peas. I'll have to try this recipe and see how it compares. Definitely nostalgia food!

    I had a Mountain House chicken and dumples meal after a twenty mile leg of my annual birthday backpacking trip this past winter, and it was the most comforting thing that I'd ever eaten. Even freeze-dried, the chicken and dumplings magic is there.

    There are two types of dumplings for chicken and dumplings: drop or rolled. This is a drop version, where you are basically creating a biscuit dough and putting them into the liquid to cook. Rolled dumplings are more like noodles, just thicker and heartier. The dough is heavier and then rolled out and cut into long, wide strips, dusted with flour to keep from clumping together then stretched a bit as you place them into the liquid. The end result thicker and chewier than a fluffy drop dumpling. Both can be a ‘spent all Sunday in the kitchen’ dinner with boiling the chicken, stripping the meat and simmering the bones by themselves a few hours more for the stock. That is “Grandma’s secret.” But, we have instant gratification in rotisserie chickens from the grocery store or use chicken breasts or thighs. The flavors we’d get from hours of simmering can be achieved with boxed or canned chicken stock, so it’s pretty much just the dumpling creation that takes up a lot of time. That might keep it out of work night cooking, but safely within a lazy weekend.

    What an unfortunate childhood to not have grown up with dumplings atop your stew. They were one of the fave winter dishes in my house growing up. I make those dumplings with caraway seeds in them and put them on top of an awesome pork “stew”. Those flavors are just as homey and delicious as the chicken. My mom always called it Dublin Stew. IDK if it has any actual Irish connections but it will always be Dublin Stew to my family.

    I was just thinking the same thing! lol Whether to add vegetables to the chicken and dumplings is an argument where I'm from. Neither of my grandmothers added vegetables, but had them on the side. They'd definitely like this recipe, but they'd tell you it's "fancy" in-laws visiting stew.

    Hey Bri! Looks delicious and warming especially on a cold winter night. Like the idea of "lighter dumplings" as her in the UK they're traditionally made with 2 parts Self Raising Flour, 1 part beef suet, enough cold water to bind & with herbs/seasonings of your choice.     Tried it out, but with a different blend of veggies (including potato). Excellent recipe, works perfect with whole poached chicken to get both the chicken meat and broth. Great way to make a lot of food easily.

    Made this tonight and got rave reviews! One of your best recipes that I've made of yours and one of the best I've made at all! One thing though that didn't affect the end product was I had about twice the dough needed to make 18 dumplings. No big deal just an FYI

    Bri…this was absolutely delicious. I made it exactly as you prescribed. Of course I had to rewatch the video a bunch of times (I am probably 100 of your views!lol) but it was so good. You were right about the poultry seasoning. I also made the stroganoff and it was the best I have ever had. You rock. I am now eating a warm bowl of chicken and dumplings and I couldn’t be happier 😊

    I really enjoyed this dish, the flavors were great. I had to cook my dumplings longer because of our elevation plus I had to cook them in batches because my dutch oven isn't that wide. My wife really liked this and we just finished left overs today.

    I just made this for dinner. I’m sitting on the couch eating it now. So good. Although the dumpling dough made about twice what my pot would fit, so I made the rest into biscuits to add into the leftovers lol. Thanks for the recipe.

    Very similar to my recipe, only significant difference is I use leaks instead of celery. Adds a really nice little onion and garlic taste. Gonna have to check out the rest of your channel.

    I can't even express how amazing this soup is! Even more mind blowing, my picky 8 year old son watched the video, wanted to try it, and then proceeded to eat his whole bowl. He was so desperate to have leftovers to take to school, we even bought a Thermos that night. Then a few days later, he asked when we could have the soup again. Without knowing my kid, it's hard to communicate how huge this is, but suffice to say he's never considered soup a food before 😂

    I am not the target audience but wanted to leave some feedback on the dumpers. I'm not in the US, purchased the closest grind we have to US AP flour, and measured the ingredients by weight. The dumpling dough was too loose to quenelle, even after letting it sit for a little while. I dropped them into the chicken anyway (on the stove right now). I didn't really grow up with chicken and dumplings but have been craving them lately and haven't been able to find a recipe where the dumplings turn out as promised with German 405 or 550 flour. Edited to add: The dumpers turned out nice and pillowy and fluffy, even though they weren't evenly sized. :) I also halved the amount of black pepper in the dumpers and in my opinion, that was still more than enough. Will try this again.

    dumplings are such a nice and cozy meal! i personally prefer the dumplings to be more gooey and chewy, but flakey is pretty good!
