After the banana flower is sliced it gets put in a big container with a little water then salted, then kinda kneaded and squeezed a few times, then drained and squeezed to get out the salt water. Then do once more with a little fresh water if you want to have lower salt. This is what I was taught by a friend who grew up in the Philippines. This gets something out of the banana flower, sorry I don't know what the substance is that the method gets out. Maybe it gets something out that makes the food bitter. I just recall it makes it better. I hope you didn't skip that step. I did once, and the food was still good, but not as good as when my friend taught me how to cook banana flower.

I saw that you didn't skip that. I was trying to help someone who had questions about why their banana flower cooking was bitter. So sorry if my mistake bothered anyone. Happy cooking to all.
