Sometimes I really miss a bowl of cold cereal. I miss the crunch mostly. It was my go-to breakfast as a kid, but it never seemed to keep me full. I was always hungry two hours later. Come to find out, that's because it was filled with carbs and sugar. I have fixed that with this keto cereal recipe. It is low in carbs and higher in fat and protein to keep you going until your next meal.

KETO CHOCOLATE GRANOLA
Serves: 6
1 cup chopped macadamia nuts
1/2 cup chopped pecans
1/2 cup sliced almonds
1/4 cup pumpkin seeds
2 tablespoons sunflower seeds
2 tablespoons chia seeds
2 tablespoons hemp hearts
2 tablespoons sugar-free sweetener
2 tablespoons brown sugar free sweetener
1-2 tablespoons unsweetened cocoa powder
2 egg whites
1️⃣ To a large bowl, add macadamia nuts, chopped pecans, sliced almonds, pumpkin seeds, sunflower seeds, chia seeds and hemp hearts. Stir together with sweeteners and cocoa powder. Set aside.
2️⃣ In a medium bowl, beat egg whites with an electric mixer until soft peaks form. Add beaten egg whites to the nut and seed mixture and mix until combined.
3️⃣ Evenly spread granola mixture onto a parchment lined baking sheet. Bake at 250 degrees for 45 minutes. Let cool completely at room temperature until the granola hardens. Break into bite sized pieces. Store in an air tight container.

I would use Pili nuts instead of pumpkin or almonds. Pili nuts are the lowest carb "nut" and absolutely the most delish buttery flavor.

Oh my! I’m going to HAVE to make this cereal real soon. Like tomorrow, or better yet tonight so it’s on hand for breakfast tomorrow. I have all the ingredients already because it’s similar to Keto Chocolate Nut Clusters by Serious Keto-a treat recipe I make often. Same 4 nuts in different amounts, so I know I’m going to love the taste of your cereal. And now I have something worthy of my (expensive!!) Cacao Bliss.

I really love cereal and like all the ingredients in this recipe except for the choc powder, don’t suppose you could give me an alternative ingredient idea? (Just made your pancakes and they are the best out there by far)

Yes, the temperature would be in Fahrenheit- there's no way you could cook them for 45 minutes at 250C and have them still edible.
I noticed you have the proper size bowl for a serving size. I eat the proper sizes too but it never seems like enough. Maybe it is because as a teenager I could eat half a box for a serving???
I've made keto granolas before and all those nuts are a mission for my mouth. The chewing is crazy. I liked cereal because it absorbed the milk and turned soggy but had a bit of crunch left. Wish there was a keto cereal closer to the real deal. Making one of your earlier cereal recipes was good (one where you made batches different colours) but again not quite the real deal. Miss it.

If you like coconut, Thrive Market has a nice option. It's technically not Keto, but it is Paleo and super clean (if this is important to you) There's 9 net carbs per bowl. Only 3 ingredients, Coconut meat, coconut water and Palm starch which are all organic and it's delicious. Tastes and has the texture of a regular cereal. It is a bit pricey though

Do you have the weights of the ingredients in grams? Would be great to have the weights in grams. Cup measurements between the US and Australia are different. Grams works worldwide. Going by Calorie King Aust. 100g of macadamia nuts is 4.5g carb (net), so how many grams would 1 cup be?
Can someone explain how she calculates her ‘carb tracker’? Because when she added the macadamia nuts for example, the tracker only went up a gram, but my understanding is that a cup or even 3/4 of cup of macadamia nuts is above 10 grams carbs… it was surprising to see her add all these things and only see the total carbs so small.. am I missing something?
