You should've held the kitchen torch farther from the creme brulee. I noticed that some parts of the sugar were completely black. You want an amber color

SSJR Dude This is fantastic advice! I'll keep it in mind in the future. Justin Koening is right, I try to stay faithful to the game... and sometimes I wing it if the instructions aren't clear. I totally agree for anyone else looking to make creme brulee though

Yup! Plus you gotta make sure your sugar is pretty even! You can do what the Bon Apetit kitchen did for their pumpkin pie- and that is layer sugar, caramelize, layer sugar again, caramelize that!

This might sound pretty weird but thank you for uploading when you did. I was having a pretty intense nightmare and couldn't settle down when I woke up, but these videos are always so soothing and make me smile. Also creme brulee is just delicious and now I want some.

@RedNblue Apparently mine consist of home invasions with changelings stealing the kids in my orphanage. Not that I own an orphanage or have or want kids, but you know how nightmares go. I think if I got better than Mama, she wouldn't have the power to frighten me. But who's to say??

I’ve made creme brûlée before and it is actually kinda tough to make. You probably could have used more sugar on top to make a better less burnt crust

Ah, welcome back. I have actually had cream brulee for the first time a few months back. Can tell it's a frustrating dish to make, one of the hardest of desserts. I really admire your ability to do this, I wish I had a kitchen of my own like this. You know Mama gets hardcore with that blowtorch.

I feel like Cooking Mama recipes remind me a bit of old, advanced recipe books that expect you to know certain techniques offhand. “What? You didn’t know your custards need a water bath? Then you deserve burnt custard, sir!” 😂 nonetheless, definitely loved this video. Feel like breaking out the ramekins and giving it a go.

U can also heat up a spoon in the stove until its very very hot, and then just put it on the creme brulee to burn the sugar a bit.

looks damn good for your first try!!! i would recommend more sugar in a more even coating on top, and to hold the torch a little farther away. it'll take a little longer, but you'll get that nice thick layer of golden-brown as opposed to a sparse black patchy topping!! its delicious stuff.

Creme Brulee tip from a pastry chef in training: After tourching your creme brulee, pour another layer of sugar and tourch it for a thicker layer of caramel. I do it whenever I make it!

So the best kind of sugar to use for creme brûlée is sugar in the raw! Put a nice covering on it, and tap out the excess. It’ll give it a really nice crunchy caramelized top!!
