    Let me start by saying that I was looking for another cottage cheese pancake recipe which is what had me here. I have been cooking for some 50+ years, many of that professionally. This recipe is a good one and one that can easily be made with 1:1 gluten free flour, which I did - this first time, but for those who are relatively new to cooking there are some things that might help them. When someone buys cottage cheese, you have no idea if you are getting a 'wet or dry' cheese, so if you have a 'wetter' cheese, you will need to drain it some, Not something I had done, this can be done easily by putting it in a strainer or colander for an hour or so. I cooked these in my electric skillet, I used a ladle which holds about ⅓ cup, this skillet had room for 4 initially. These 4 turned out just like the ones in this video ! Yea ! Oh, and I used about a Tablespoon of Sunflower oil in this stainless steel skillet only at the beginning of cooking. But, unfortunately after the batter sat for a bit as these 4 were cooking, things started to separate and the next batch was soo runny, I was really taken aback. I found that by pouring out of the ladle Really Slowly I could keep them somewhat under control. This recipe unlike all of the pancake recipes I have made over my lifetime, never thickened up as time wore on, obviously due to the amount of eggs, the milk, the wetter cottage cheese and the low amount of flour. One of the Great things about this recipe is that you don't have to slather them with butter ! In fact, my hubby who is a Butter Lover, never even realized that I hadn't buttered his ! And if you do want to use maple syrup, you can use a lot less ( I always warm mine). Also, if you want to use maple syrup, you may want to add a ½ tsp of cinnamon and mayhap a tsp of vanilla as I could really taste the tartness of the cottage cheese when using just the maple syrup. If you use vanilla just use a tsp less of milk.

    For old guys like me, you may recall a very similar recipe from the Moosewood cookbook in the 70s. It includes apples, cinnamon and lemon. I love it.

    This is always my go-to pancake recipe. Today, I tried it with sour cream 😋 What I always do differently is the sugar in the berries I use dates sugar. can't have regular sugar. I also put a little vanilla extract in my berries. ❤THANK YOU FOR SHARING.

    I made today a very similar recipe though it had baking Sosa and the egg whites were not whipped. They were extremely light and fluffy. I will give these ones a go.

    Made today, delish.I think maybe I over whipped the whites a bit, the cottage cheese totally disappeared. Super light tho. Found if I shoved my basic spatula under each pancake upside down, then turned the spatula over to flip, they didn’t stick to the griddle. Def needs oil for cooking, which I’m not used to on my nonstick griddle. Berries great with them, I got the syrup out, no need.

    Do the lumps of cottage cheese sort of melt in the cooking? Could you whip or puree the cottage cheese first if not? These look really delicious with the creme fraiche and berries.

    They do sort of melt, which is delicious! One commenter on Food52 said they always pureed their cottage cheese for pancakes, so you could-but I like the little pockets of creaminess, personally. -KM

    So if the cottage cheese a bit runnier do we strain it overnight to reduce all the liquids?thanks in advance

    Smart idea-the pancakes will still be good with runnier cottage cheese, just a little flatter. If that doesn't sound good to you, I think a shorter strain would do the trick-no need for overnight. -KM

    I think that should work, since there's so little of the flour and the eggs and cottage cheese are doing most of the binding. Please let us know if you try it! -KM

    Cottage cheese pancakes with mashed bananas and oat flour (just put oats in the blender) and a little cinnamon -- SO good. You could also make a quick banana topping (mash bananas, cook with a splash of rum, cinnamon, nutmeg) rather than putting them in the pancakes and they'd stay lighter.

    Just tried this recipe. Not my taste, didn’t taste good to me. Pancake texture is too soft and salty. Recipe shouldn’t include salt bc cottage cheese is already salty.

    I tried this and didnt like it. There wasn't enough flour. The pancakes deflated really quickly. Too salty. Very disappointed with thr outcome
