You can do ones on indian empires like-mauryan empire,gupta empire , maratha empire too though my favourite would be the gurajara-parithara they beat the heck out of umayads but didn't consider them as a " worthy enemy" and then proceeded to fight against their arch rivals the rashtrkutas beating arabs,the palas in between but they never stopped fighting against the rashtrakutas, you can also do cholas.
