Enjoy 8lbs chicken bones 1 celery stock, rough chopped 2 whole carrots rough chopped 2 large onions, peeled and rough chop 8 rosemary sprigs 8 sprite of thyme 6 bay leafs 8 garlic cloves 2tbsp black peppercorn 2 C white wine Directions. roast the bones at 350 until golden brown. 30 minutes In a stock pot on stove place all other ingredients. Deglaze the pan with 2 cups white wine. This way you loosen the fonds where all the flavor is. Add in bones. And enough water to just cover the bones slightly, and the fond glaze as well. Cook on low heat for 2-3 hours. Once through, place through a strainer.
