Welcome to This Alaska Kitchen where we show you what we cook with our Costco haul and the meat from the freezer. We are hunting family and use moose, dear, bear, salmon, and halibut as the protein to feed our family of 6. Recipes are listed below!

Salmon Chowder:
1 onion
1 package of bacon
3 stalks of celery
4 medium potatoes cubed
8 cups of chicken broth or fish stock
2 tbs liquid smoke
1 fillet of salmon (skin removed)
bay leaf
can of corn
3 cups cream or half and half
salt and pepper to taste
1. Sautee bacon, celery, and onion until onions are translucent
2. Add chicken stock
3. add potatoes, liquid smoke, bay leaf, and salt and pepper, simmer for 20 minutes
4. add salmon and corn, allow to simmer for 10 minutes or until salmon is cooked
5. Turn off heat, add cream, more salt and pepper to taste

Lasagna : (one lasagna)
MEAT SAUCE
9 uncooked lasagna noodles
1 lb ground meat ( we use moose or bear)
1 lb italian pork sausage
3 cloves of garlic
1 can (28 oz) crushed tomatoes
1 can (14.5 oz) diced tomato with basil, garlic and oregano
CHEESE LAYER
4 tbs flat leaf parsley
1/2 tsp black pepper
1/2 tsp salt
2 cups skim ricotta
1 cup romono cheese
2 eggs beaten
2 tbs thinly sliced basil
3 cups shredded mozerella cheese
1. oven at 350 F
2. boil noodles according to directions
3. cook meat layer, simmer uncovered for 10 min
4. mix cheese layer
5. assemble in a 13x9 pan

Halibut Parmesean: ( adapted from Pampered Chef Chicken Parmesan)

Moose Tacos:
1/2 onion
6 small peppers
Roasted in the Air fryer, sprayed with avocado oil
Mix 2 lb meat with taco seasoning
Pico De Gallo:
6 mediumTomatoes
1 Onion
1 Jalapeno
1 bunch Cilantro
2 stalks of green onion
Juice of 1 Lime
Salt
Pepper

    I have a quick tip I saw your cutting board move when you were getting the onion ready to peel wet a couple paper towels or wash cloth and put them under your cutting board to prevent it from slipping or moving. 😊

    We make sure we pull the eyes of the potato’s off as soon as they start sprouting out. We never let them get long. Also you could try putting the potato’s in a thick brown paper bag and make sure they are covered up and store in a cool but not freezing dark dry room.

    They are out of sight and out of mind until we need more. We have the cool and the dark, I think we need to make sure to cover them next year!

    We have had good luck storing potatoes in our basement where it is cool and totally dark. We repurposed plastic stacking bread trays used to transport commercial sandwich bread, because they allow for air flow and prevent one bad potato from harming the whole batch. We also store our carrots in an old wooden crate filled with dry sand. Thanks for another great video!

    When you’ll see the stems starting you go through your potatoes and pull them off! The potatoes will last till spring planting. Takes a bit of time but saves your potatoes. In northern Ontario it was a February job.

    Mark, potatoes need to be stored in a dark cool place. You can use your pails for storage but cover them with a breathable cloth such as burlap. I have really enjoyed your fishing and hunting trips.

    oh for your potatoes you can do many things to store them. you can cut them up & can them..blanch & freeze them..make French fry forms and blanch and freeze...and the rest put in a box in a dark place.

    You should always put your dried spices in your hand, then give them a good rub with the other hand. This wakes up the flavor and awakens the oil of the herbs. Just a little hack my grandmother taught me. I noticed you already roll up the other fresh leafy Vega and shifinad. I do the same.

    They say don't put your potatoes in the frig. But I do and they last me about 2 months. I use to work for a country restaurant and they kept their potatoes in the walk-in. Good luck.

    Hope you don't mind if I share a recipe here. This is my family's new favorite. Brown bite sized chicken in skillet,with some onions and peppers. Adds a can of drained black beans,corn,diced tomatoes, and 2 envelopes of taco seasoning and 2 cups(before cooking) of cooked rice. Top with cheese, sour cream, scallions, the whatever you like!

    Glad it sounds good to you both! I am sure it's a recipe that has been done before by someone but I sorta concocted it out of a few different baked recipes I was going to try but then kept adding and switching things and that was the end result. Lol I've been calling it southwest chicken skillet.

    Hello, I’m new to your channel, but I’ve been watching some of the older videos. To store the potatoes, you need to dry them out after harvesting (this is key), and then store them in a dark area in baskets or crates that allow for air flow.

    Love the halibut and salmon recipes. Will be trying this week. Always looking for variations for fish. Grand hair cut--Spring shear! Made egg noodles with my grandma; she let me cut them with a butter knife. Everett has the YT sign off down! Happy Spring.

    From my understanding, POTATOES should be stored in a dark cool place. Just make sure it’s a place that you’ll not forget about. The potatoes have sugar in them, and when you store them somewhere not cool and dark. They have air around them. With the air and sugar in the potatoes. That’s when they go bad. So try the cool dark place I see farmers put them in there basement in a cool dark place. Hope this help you.

    I really lucked out in this department. I learned a lot about cooking from Mark. I always preferred baking over cooking. And then with all the game meat I was lost but he and his parents shared their love of cooking, I feel blessed. Kids are always happy with Mac n cheese too!

    I love these types of video. I love cilantro. I have been enjoying Kenyan beans lately. I use pinto beans or black beans, diced or petite tomatoes (I use petite tomatoes), cilantro, onions, I add garlic, and salt & pepper.

    All your recipes and prep looked amazing. It is 11.10am on Saturday here in Melbourne Australia and we lose our daylight saving here tonight as we are now in your fall, our Autumn coming into winter. It is cool today and I can't do much cooking nowadays due to age but mainly disability so I love seeing you all cooking together which is something we never did as children.     The egg roll in a bowl looks amazing!! My sister got me to try chicken potstickers by telling me that they were just eggrolls in a fried steamed dumpling. I would like to try that with chicken and then add some fried wontons for a crispy bite. I've had two surgeries since Nov. and food just doesn't interest me, but when I find something I can eat, I eat a lot of it. I make my own herring in cream sauce and now the chicken potstickers.

    We love butternut squash lasagna in our home. I sub the butternut (pureed with egg, cheese and cream) for the ricotta and it is SO good. Works well with a tomato or cream based sauce.

    You can definitely plant those potatoes (don’t cut off the runner because the potato will spend too much energy on regrowing). We had potatoes like this and planted and got a nice yield from them!

    I so am gonna make that Egg Roll in a bowl. I've seen it made w Coleslaw Mix for a quick meal as well. you know I've NEVER boiled my lasagna noodles ever! I was taught to make it without boiling them. you just brown your meat..layer start w a tiny bit of sauce..then noodles..Mix your ricotta w 1 egg. I add garlic & parsley to it..then layer. place foil over lasagna and it basically steams it. to brown your cheese take the foil off the last 10 min or so..and you don't have to buy the no boil noodles either bc they give you half the amt as reg ones! Everett will always be the sweetheart ❤️ when he said Mom is the best snuggle buddy my heart melted. love it!

    really enjoyed watching you cook all those yummy looking meals. Will definitely try the salmon chowder and the tacos, though without the moose meat since there're no moose in Germany 😅but I got some venison meat left in the freezer... Also try to skin the ginger stem with a tablespoon, sooo easy and very safe for your boys to try.

    They were in the dark and cold. I think we need to lay them out flat and cover them. We will try to do better next year! They looked like aliens coming up from the cold cellar

    Too cook noodle, bri g your water to a boil, put noodles in turn off heat. By the time you have everything ready noodles are done.

    In Spain we always put an apple with the potatoes. If you do it they don´t sprout but it doesn´t work if the potatoes have already sprouted

    I know I am watching way late and I hope someone already left you some tips about the potatoes, but, just in case. Most important to prevent early sprouting is to keep them in the dark. Don't expose them to any light. (Also, potatoes exposed to light start to turn green and you really shouldn't eat them because the green is caused by a chemical that, in large quantities, is bad for you.) Also they should be kept cool, shouldn't be a problem there, lol, and you want good airflow and try to prevent them from touching so if a few rot, they won't ruin the rest. You could totally have planted hem with the long sprouts. Piled in a bucket all together, exposed to light from the top, is not what you want for long term storage. I grew up on a farm and planted and dug a lot of potatoes, but now I do it the easy way, with grow bags so when they are ready for harvest, I can just dump them in a larger container, or a wheelbarrow, pick up the potatoes, then put the soil back in the grow bag to use a couple more times, adding compost and fertilizer at the next planting. And, the last few years, I leave a few small potatoes in the bottom of each bag to sit over winter and then I don't have to plant at all, they just come up by themselves as soon as it's warm enough for them. But I am in zone 8 in western Washington so leaving a few potatoes in the bags for next year might not work unless you kept them in the garage or somewhere that wouldn't get desperately cold.

    P.s. I left this on a different video, but if you are going to plant in the ground, digging the potatoes is easier with a pitchfork because you aren't lifting as much heavy soil as you do with a solid shovel.

Yes avocados are over priced in my area also. I will be missing them in my diet till the prices come down. Have a nice weekend! Have you ever used the lasagna noodles you do not have to pre cook?     Help your cutting board not move, use your rubber trivet/pot holder under it while you cut or use a wet towel. Keeps the board from moving on you. All your meals looked good.

    If you get a bear at the right time it’s meat is very sweet and so good. This black bear has been so good!
