Objectively wrong as none of these steaks are well done. We could expect Makhachev to be rare to medium rare.

Volk is a GOAT of many talents. Always thought it was brilliant how with one hand he dealt with Ortega's pranks and with the other he cooked for his team members during TUF.

I usually don’t make these comments, but honestly. Volk mate, you are an absolute inspiration. Been going through some pretty bad times in life, whilst obviously your skills in the octagon are absolutely incredibly, but in my mind you really embody everything a martial artist should be, helps me to try keep moving forward. Reminds me of the type of people who got me into martial arts which changed my life. Cheers from West Australia mate! Wish I was able to get a ticket to see you smoke Islam but no luck I’m afraid. New Zealand is the same. I've gotten really good at cooking pork because it hasn't fluctuated in price at all. Chicken and beef are ridiculous right now.

Attention to detail is incredible
There's nothing i understand more then the fascination for an awesome steak. Little personal story to that: Big money was never thing in my family therefore, such restaurants or expensive meat weren't either. Someday at work i got kind of accidently involved in meeting situation with some leading employees and customers. I was just assisting but they decided to go eat and invited me. We went to a nice steak house in town. Sportstars jerseys, and pictures of famous people everywhere. So i got a steak. So expensive, i would have never ever bought it for me but is was still the cheapest to get. I was SO blown away by how good this was. I didn't know food could taste so good. I think back to this moment so often, it's concerning. Really really really nice food can do things to you, it's amazing.

This guy was REALLY knowledgeable about steak I've learned a few things myself especially as an avid reverse-sear camp steak guy his comments on the difference in texture between a reverse seared/sousvide steak and a straight into the fire steak

great episode. interesting hearing the chef mention reverse-sear being a bit "one-dimensional"- i absolutely agree, and prefer cooking exactly as he specified, wherein some bits are rare, medium, some parts by where the fat is rendered closer to medium-well. but that way you get the full spectrum of flavours and textures. love it.

I have always aimed for even cooking throughout the steak using reverse sear or even sometimes sous vide. But his explanation of different textures throughout a single bite of steak is something worth noting. I will soon be direct grilling and getting back to my roots to try those textures.

It’s really good when direct grilling is done with care. The different textures mentioned do make it a different experience. And I do it from time to time. But sous vide reverse sear is the way to go in my eyes. Can turn a low quality piece of meat into something much better

Absolutely top quality content. Volk fitting to make loads of money after fighting and transitioning to multiple media ventures. Talent everywhere. I'm really starting to think there are too many dimensions to volk and makhachev won't be able to adapt enough.

1 1/2 cut Wagyu chuck eye steak. Slow smoked with cherry, pecan and oak. cast iron pan seared in European butter and basted with rosemary, garlic and thyme. Medium rare. Great steak, champ.

Not reccomended to eat dry aged meat passed medium rare. You are destroying the aged meat flavors. These are really expensive steaks
