1) Dedicated to the great Italian gastronome Pellegrino Artusi, in the context of the celebration of his 200 anniversary. The IDIC 2020 Official dish is "Cappelletti all' uso di Romagna with the recipe from Artusi's best seller: the "Science in the kitchen and the art of living well."
2) Participating to the IDIC, chefs, restauranteurs and their beloved customers all around the world want to reaffirm their commitment to the true Italian cuisine. They also pledge full recovery of the global Italian restaurant industry that has been severely hit by the consequences of COVID-19
