Scrambled eggs cooked on the griddle by a volunteer. It's not easier than cooking them in the tilt skillet, but it is faster and the eggs taste 10 timea better. We started cooking our eggs this way over a year ago and we have had countless guests compliment our eggs. I don't remember ever getting compliments on eggs the 9 years prior when tht were cooked on the tilt skillet. The other great thing is that they cook so fast, you don't need to worry about running out or cooking to much. We like to cook just a touch less than we may need, and cook more on demand as we see the need. 50 percent of the time we don't need to cook more, and have minimal waste.

    Everytime you cook eggs when you pick them up what stays behind burns you have to scrape it down or your next batch comes camoflaged jejeje that's why it's like that so the egg looks clean if you lower the grill the eggs take a lot of heat off it

    Salt will actually break the eggs down if you apply before they are hot. If you want fluffy eggs, salt toward the end

    Why are people being so negative here? sad. They have no idea what it's like doing something like this for large groups. We did this just recently with egg, bacon and potato, and egg, chorizo and cheddar for 7000 guests produced on site. It's a massive undertaking but was a great experience for me to put together. We also used multiple flat tops/griddles and it came out great that way.

    seeing at this is supposed to be for 500 there is another empty 1 gallon jug or two they are probably just doing back to back batches I highly doubt its that dirty for long. or else your right they would be shut down.

    john theriault You are so right..I'm a Chef at Marriott Hotel and when you are a great cook you will clean as you go.. you can't leave that grill get like that.. it would drive me nuts work with the spatulas they way they are..that's a nasty wannabe a cook and this video shows everything you can do wrong when cooking on a flat top... everyone else that comment here don't know what they are talking about.

    Forest Fawn so is so sad that there is no supervision or someone to lead the volunteers so they can learn and have fun and do a service in a professional manner..I also volunteered for the Kansas City Rescue Mission and when I was there I was advising and actually training the other volunteers to get and do the job done in a professional manner. It don't matter if you are cooking for the less fortunate or or for the rich or who is cooking. Someone should be in charge and show the volunteers to get this done right, specially when it comes to prepare food as someone can get sick or injured.

    Any of you people commenting about how the kitchen is dirty dont EVER go out to eat. I bet 99% of the places you eat at have kitchens that look the same. I've been a cook at quite a few resturants and not one of them had a perfectly clean kitchen. I worked for an Ihop and during our rush's it looks like that. "The Utensils are dirty" They have eggs on them. He is cooking eggs what do you expect? same with the Guard thats the point of it is to collect bits of food. the only thing he did that upset me was used a cornered utensil and scratched the grill

    Use white pepper when making scrambled eggs. You'll get the flavor without the black specks. Better presentation. And for fluffier scrambled eggs for a buffet, heat them in a steam table. Takes longer but much better result.

    Dude has a problem with his right hand and is dragging the spatula at a perpendicular angle, making an awful noise, should be only smooth sounds there. The chop, chop in the middle of a big pile of eggs is totally unnecessary.... fold lift, fold lift... my two cents.

    damn homie dropped about 10 eggs while transferring them to the container. Not only is the stove nasty, but you shouldnt use raw eggs and cooked eggs with the same utensils. He's got raw egg yolk on the top and bottom of his spatulas! Oh well...I guess that's why he's mastered it after an hour of practice lol. Also, spices go in at the end. You put them in at the beginning and youll cook away the flavor. That one was free. You're welcome.
