Ryan! Former cook at Michelin restaurants here. When cooking steaks, don't sear with butter. You're going to burn the butter and it will become rancid. Sear with an oil that has a high smoke point, like peanut, canola, rapeseed, or a mix of olive oil and canola. Then, once one of the sides are seared and has that nice colored crust, flip the steak and then add your butter, herbs, and garlic and then start basting. Never sear with butter!

Skateboarding was awesome! Love the video! If you want to REALLLY upgrade that filet experience, reverse your cooking order. 45 minutes at 225 degrees in the oven, followed by a 1 minute sear on each side...makes LITERALLY a perfectly cooked medium rare steak. Called the "reverse sear" technique and it's foolproof and the best I've ever had. Cheers!!

My favorite place is Sedona 342 miles away from where I live I’m not full-time in my van, but will get there soon. Random! i usually cook my filets 2 minutes each side piping hot TO get a good sear, then pan on medium and baste until she looks good. Great video i always enjoy kicking back and watching an episode of the van life.

Yo ryan!! love the videos. Pro tip: put the skate board sideways on your back inbetweeen the bag and your back. use the straps to keep it there!! helps a ton with stability plus you can still keep your bag packed!

In AZ: Lee's Ferry / Horseshoe Canyon / Vermilian Cliffs (super scenic). There's also a cool historical homestead that you can actually go to and walk around the property. It's close to Page, AZ and could be a nice stop on your way to Mt. Zion. I've done that trip several times.

I feel you about Saturdays. I would rather chill at home or work. Everyone else can have it.

I feel you on the Saturday stuff. As a nomad I just stay in the city during the weekend because I don't want to deal with crowds. When I go to popular nature places I always go on a Tuesday or Wednesday and early in the morning. All those people on that hike you went on was insane, my ass probably would have just turned around and came back another time lol
