    Lily Chong nope, must throw away the water used for blenching because it contains the unwanted odour of the meat

    Can i use pressure cooker instead of boiling 1-2hrs? Meaning to cooking in pressure cooker for yr chicken/pork broth.

    Lean pork is not really suitable for pork stock as it doesn’t contain fats

    Yeah, I have also noticed a difference between European pork and SEA pork. The SEA pork has better flavours. China pork has a stronger smell and a litttle strong flavour. Maybe it has something to do with temperature. The colder the region, the stronger the pork taste and stronger smell.

    Hi how do u portion out the broth for future use? what will be ur recommended ratio of the pork broth versus water when u are using it? How Long can we keep this pork broth too?

    So what if the broth is not clear. By throwing out the first boil, you remove a lot of nutrition.

    The first batch of water does not have nutrition.. it contains the blood and dirty particles of the pork bone..

    Hi Ah Pa, can i exclude the celery? My kids don’t like the flavour of celery. Would this affect the broth? What can be used to replace the celery? Leek?

    Thank you very much for this informative video. It helps me a lot to cook nicer food. One question: you mention in your video that you don't add lamb to the broth. Is there a specific reason not to add lamb to broth?

    @@CookingAhPa Yes, lamb bones. As from 10.25 you explain what kind of bones you might use for this broth and at 10.40 you mention: "....it doesn't really matter what kind of bones you want to use, may be not lamb (bones), not lamb........". Do lamb bones have a pronounced taste which is not very suitable for a basic broth?

    In your another video on blanching chicken bones & feet, u said put in the chicken bones & feet before the pot of water was at boiling point. Then now in this video of blanching the pork bones, u said put in the pork bones when the pot of water is boiled?

    This is one of my oldest video, at that time, I didn’t know yet it’s best to add bones into cold water first, then only bring it to boil.
