Congri Cubano aka Moro Negro or Moro de Habichuela Negras is both a Cuban and Dominican dish that's widely popular and delicious. I love making this rice whenever we have guests coming over for a party or dinner. It feeds a village and pairs nicely with Ropa Vieja, Pollo Guisado, Chuletas, Pernil and so many other recipes. I love using leftover Cuban Black Beans to make this dish. It honestly never disappoints. Take a look and let me know what you think. Thank you so much for watching!
Ingredients:
2 cups of white rice
2 Cups of Leftover Cuban Black Beans
1 tbs Chicken Bouillon Cube
½ White Onion
¼ Green Bell Pepper
3 garlic cloves chopped
¼ tsp Oregano
¼ tsp Cumin
¼ tsp Black pepper
1 tbs Recao-- culantro and cilantro
Canola Oil
2 Cups of Black Bean Stock or Water

Delicious! We Central American make it very similar too : in El Salvador we call it : Casamiento ( marriage) and in Nicaragua and Costa Rica they called it : gallo pinto .. 🇸🇻🇳🇮🇨🇷

Chef Zee Cooks ! I am from Costa Rica, but I love Dominican food, Iearned from a Dominican to use the sour Oranges, ! Visit Fosta Rica anytime is the best country in the area, and Panama too!

This rice blew my mind when I went to Cuba! So good. I'll never forget a restaurant I went to in Havana that served me something called "chilindron" (don't know if I'm pronouncing that correctly) with that rice. Ugh! so good.

If you want to use canned beans you can use them and still have the color , just liquify a can of blk beans with water and that will be you broth . 😉

I love your explanation!!! See, I wish someone would’ve explained about the canned beans. No wonder my version of congri always falls flat...mine comes out grayish for sure. I always wondered how to get it to be darker.

This looks delicious! In Belize they make a similar looking rice but it is made with coconut milk, coconut oil, cilantro and thyme.

Instead of using aluminum foil to cook rice there are special aluminum pots made for that purpose. They barely let any steam escape. It’s sold mostly in Latin America. The brand is: Imusa. It has a rough finish which helps create that seal

It should be the other way around! You should make the traditional way and have a separate video doing it your way! Either way both are good!
Deeeelicious ! It came out sticky, just the way I like it, One small lesson : The correct name for this is MOROS, from MOROS CON CRISTIANOS (Moors and Christians). This probably came from Spain to Cuba or Cubans invented it, I dont know. At one time there were lots of Moors in Spain, so the name Moros con Cristianos is a blend of the Moors (who are dark, being Arabs) and the Spanish Christians, who are white. CONGRI (Con Gris or "with grey") is just like this but with RED BEANS. Somehow the name "congri" for the black bean dish got used in Miami by non Cubans and now even the Cubans use the term. This is how I think it started to be misused. I'm 74 and we always called them Moros (black beans) and Congris (red beans) .

Right now im making your black beans from scratch recipe. The same water i used to soak the beans i used for the beans. If im going to make this dish using those beans, where would i get the bean stock from seeing how i used it to make the beans? Hope this isnt a confusing question.

Nope bean stock is the juice in the can of the beans.
Do you cook the white rice fully before adding it to the beans? I suspect you'd want to only partially cook the rice first?

I use Long Grain Rice-- Arroz Carolina or Canilla. If your rice comes out over cooked try adding 1/2 cup LESS of water. Sometimes the pots, pans, and even stove can effect the outcome of our rice. My mom's stove doesn't heat up as hot as mine so I always end up having to use less water whenever I'm cooking in her house. I hope this helps :)

How much water and rice need to be under
If i am using a fresh can . Should i drain the water from the beans ?

I would keep the water since it will help with flavor and color. Note that if you're using canned beans, your rice won't come out as dark as in the video :)
