At first I didn’t understand this comment but after reading all these dipsh*t posts below about it being “ruined” and a “waste” I do see what you are responding to. Do some of you “experienced pitmasters” just not know how competition prep works?

Great video! Folks its a competition trim. The slices need to fit perfectly in a box and not all judges don't like to eat the fat Most all of the Pitmasters grind up the point and fat trimming to make brisket burgers, beef stew, chili and yes tallow.

Absolutely not. I know real PitMasters who don’t compete anymore due to the b.s.. Me personally I think bbq should stay true to its purest form. Anyway to each their own.

@@JosePerez-iw2pl I don’t know what the emoji was for but to answer your question the competition briskets trim takes off entirely too much of the brisket (3-4lbs) and it’s usually wasted but for more of a traditional trim (1-2lbs) generally cuts just enough. The brisket trim traditionally is used for the beef tallow. Anyway hope I answered your question and please edit off the emoji no need for disrespect or bullying.
