I have a portable bluetooth receipt printer that prints tickets for every transaction. We use restaurant ticket holders to organize order tickets. Once drinks are done a staff member calls the name of the customer to pick up. If they don’t come after 2-3 calls we place the drink on the ticket with the name showing so we can continue producing drinks.

What we do at my high volume commercial cafe is one name per group of orders. When we start getting slammed, we'll get another person on the bar to line up the cups, add the syrups, lid them and call out the names. This is so that the one person can just focus on pulling shots and steaming milk. I feel like this role could have been great for you guys, although it's an extra body. This person can be more attentive to the customers and keep track of who gets what and which drink to send out next.

Yeah good suggestion. Will take that and see what we can do for our next event. We are also limited by space so it gets a little challenging sometimes.
We had a pop up event as well. But since we are in ph, everyone is ordering flavored iced drinks. Key was to create a menu where you only have to bring 3-4 syrups but can use it in 5 or more different drinks. For example, a caramel Macchiato, vanilla and caramel latte only uses 2 syrups. And also for iced drinks, you can pre-fill the cups with milk. And just add ice, syrup and espresso if someone orders the drink.
How much milk and alternative milk do you bring?
Very interesting. How did you manage to clean your milk pitcher in between? Did you have a water filter installed? Was your machine connected to the tap / sink or did you have to use the tank and drip tray?

Hi Marko, for events its almost impossible to clean your pitcher in between every shot. What we do is we brought at least 3 to 4 different pitcher, and we have 1 pitcher that is just dedicated to steaming milk. That pitcher is usually a 1L pitcher, and we will split the milk into smaller pitchers that is just dedicated to pouring milk. Our machine wasnt connected to a water source, it would have been nice to have it connected, but we make do with what we have.

I would be interested to hear how you were able to overcome the thermal overload on your onboard pump. I have a coffee cart with the gs3 on it which is designed for more volume. My machine cuts out at 100 drinks per hour. Did you change anything to your machine or upgrade anything to get more volume? Would love your input as it’s frustrating to be limited by the equipment and according to la marzocco when I called they said I’ve hit the machines limits and anyone doing this type of volume would have a 2 or 3 group head commercial machine

huh that is weird. That is my first time hearing lamarzocco having a thermal overload. Our machine is just stock and we did not modify anything on it. Also granted during events, we split shot, and its just a single shot per cup, so that makes 100 cups. We have been running and pushing this machine hard, so far no problem or issues with thermal overload before. It might just be that our machine is also the newest model? Not sure if that is a factor.

is Eagle One Prima can handle 50 cups per hour ? Anything you know about it ?
Thanks for the great contents. Novice here. How did you deal with the fact that your machine was not hooked up with water source? Doesn't it take time to heat up the water once you refill it?

Hey there, thanks for the comment. So as I understand, the water in the boiler is usually already heated up, and once it is out of water/time to refill the water tank, there is still some residue water in the boiler that has already been heated up. So once we fill the tank with water, we could then just go on pulling shots again. So it doesn't take much time.

Did you only have the 1 grinder? I'm guessing you didn't do decaf, or if you did, did you pre grind it?

Yup we only had one grinder. Usually for pop up events like what we did most would just require normal coffee. We unfortunately did not prepare any decade option.
When the line gets really long, I put start asking people their names and writing those on the cups as well.

Sometimes it's impossible as one person would order for 4 to 6 to 8 people. But yeah let us see if that works next time.
