    I'm from Jamaica and this really is a great snack. I'm very sorry that Grace Kitchens stopped coming on T.V. I used to look forward to watching it in the evenings.

    Studying in Jamaica currently and my Jamaican friends introduced me to this delicious snack! It is such a sweet, sugary delight bursting with flavour and a very unique texture of the crystalized sugar and the coarse coconuts! In Trinidad they go by a different name. We call them "Coconut cakes" or some persons(depending on where you live) will refer to them as "Sugar cakes" The term "cake" is used very loosely. I'm glad for this recipe, now I can make them for my relatives and friend in Trini while I'm here and give them a little peak into the cuisine of The Rock!

    In each country the same or similar things have different names. In Barbados a similar recipe is called sugar cakes, the only difference is the coconut is grated, when the boiling process is finished, they are spooned onto a damp clean board to set/dry

    Can you use dry coconut from the store in a bag and coconut water in a packaged bottle and use all the other ingredients as you mention? Will it cook and do the same .?

    In Jamaica we call it as it is “coconut drops” Coconut cake is with flour and Rock cake is also a Coconut flour mixture that when dropped stays in place v❤
