Plumber from Ohio here... Question about the house traps: does having a house trap mean you don't need p-traps for the fixtures in the house? Orrrr is it still good practice to have traps for tubs, sinks, etc.

whole house trap is leftover from the days of not having traps on any fixtures and no vents anywhere. for obvious "smelly" reasons, every fixture should have a trap and be vented properly.

when sewage water sits for a long time, it does turn black. (hence the names "black water" drain from toilets, and "grey water" drain from sinks and showers/tubs)

It's just the waste breaking down and decaying, like leftovers dumped in a compost going black. It shows how long the waste has been blocked up lol.

majority of them were installed back when it was all new construction about a zillion years ago lol. back then toilets had a massive high GPM flush and people didn't put endless loads of trash down the drains.
