Classic Swedish Princess Cake

Learn how to make a classic Swedish Princess cake at home! Its easier than it looks!
CAKE:
220g Eggs
88g* Egg yolk
140g Sugar
140g flour
66g* melted butter
*if you’re off by a gram or two, its ok!
Heat egg, yolk, and sugar to 130C/55F in a Bain Marie
Whip until super light and fluffy
Fold in sifted flour
Fold in melted butter
Bake immediately at 180C/350F for ~20 minutes
RASPBERRY JAM:
250g Raspberries
200g Sugar
Lemon juice to taste
Cook until raspberries and sugar until thick
PASTRY CREAM:
500g Milk
1ea Vanilla Bean
100g Sugar
50g cornstarch
120g Egg Yolk
25g Butter
Bring milk and vanilla to a boil
Whisk yolk, cornstarch and sugar together
Temper in the hot milk
Bring back to a boil, whisking continuously
Boil until thick and glossy
Pull off heat, immediately stir in butter
Pass through a strainer
Cool, will set up very firm
Whip before use

    I think this is a better version of the "famous IKEA princess cake" I used to love as a teenager!! They don't distribute this to the Czech rep. anymore! I'm so happy to find this amongst your recipes!! I'm so happy to find your channel! I'm gonna check out your apple pie recipes, because it used to be my new "IKEA favourite" before they changed the ingredience. I don't know if it's a Swedish tradition, but they used to pour a custard over - it used to be marvelous. I miss these desserts so much!

    Thank you for the recipe!! I have always wanted to make this cake, and now I think I will! I believe the reasoning behind not putting powdered sugar in the whipped cream is that the sugar will draw the water out of the whipped cream and into the marcipan through osmosis, making it soggy. Also, rolling your marcipan out on the counter with powdered sugar is fine (it's what I use) because there's not any moisture for it to soak up I've never seen pre-colored and rolled marcipan like that from Odense here in DK. I'm envious! lol

Jag och dottern provbakade idag (födelsedagen är i slutet av månaden) och det blev en supergod prinsesstårta med hemgjord marzipan - något grovmalen, för min matberedare har sina begränsningar. Dina anvisningar var helt perfekta och vi studerade varje steg i detalj. Tårtan blev till och med ganska snygg om man tittade på den från rätt vinkel. Tack!! 💚💚💚

Home made marzipan is just So much better than store bought. ( I have learned a lot from you today ....it shows that even at 68 yrs old there is plenty of techniques to learn.)     I’m glad you like my videos! Thank you! I have actually never made marzipan myself as it’s so readily available here. And the type of marzipan you need for covering a cake is a bit different than the stuff you need for making figures and candies. Cake marzipan is usually really smooth and not sticky at all. I don’t even know where I’d start to make that hahah.

    Marzipan is really easy to make and few ingredients....it takes the cake to a new level of wonderful taste.... I use it on fruit cakes .....I don't add gum tragicanth/ gum acacia..as one does for making figurines and flowers . Recipe- 8oz icing sugar, 8oz ground almonds , 1 lightly beaten egg, half teaspoon vanilla essence ,squeeze of lemon juice. ( I use almond essence and a touch of brandy). Sieve icing sugar, work in almonds egg and essence and just enough lemon juice to make a stiff dough...kneed lightly to a smooth paste. Try it some time you may enjoy it. We love the left over bits rolled into a small ball and dipped in chocolate!😊

    Id say it’d last at a couple days. It probably wouldn’t be bad or off by day 5 but it definitely wouldn’t be nice. And you can’t freeze it because you can’t really defrost the cream, it’ll just separate. You can however freeze the cake base before you build the cake.

    This is amazing!! Thank you for your honesty and spunk. Such a refreshing video and informative demonstration. Any suggestions on making the marzipan? Also the temp for eggs and sugar mix is switched 130c/55f should be 55c/130f first time I made it I had cooked eggs lol.

    It could be fondant but, and this is just my personal opinion, fondant doesn’t taste as good as marzipan. Like the almond from the marzipan is really part of the flavor profile of this cake. So the cake would look right but not taste quite right. Again, just my opinion though

    Where she is she can buy it premade, colored to the right shade and already rolled out... So she hasn't given a recipe for the marzipan, no.

    Yes exactly, I’ve never made my own marzipan because I can buy it at the grocery store plus you really need a good food processor to make it nice and I don’t have one.

    It’s not super common to eat princess cake on the National Day. Since nationaldagen is in June most bakeries just make little treats with fresh strawberries and sell those.

    I’m drooling right now, Yummy! I made princess cake before but we live in Manila, almond paste aren’t available in this country we used to bring them from Sweden. Next time I will buy the same instead of the whole block it’s more work. I learned one thing also you mixed pastry cream and cream 50/50 I haven’t done that part. Thank you for sharing your step by step procedure I will definitely do the same.
