Clarified Pina Colada Recipe | Acid Adjusting, Clarifying & Fat Washing

The Pina Colada cocktail has to be the ultimate vacation cocktail, but what do you do when you’re craving a pina colada in the dead of winter? Make this delicious clarified pina colada riff. Coconut oil washed pineapple rum, clarified coconut milk and acid adjusted pineapple juice make a sensational sipper of a pina colada, perfect for the winter time, or any time of year!
First you'll need to acidulate the pineapple juice. We're doing this to obviously enhance the acidity of the juice but also to help it retain those bright and punchy flavors. When we clarify things they tend to lose their acrid qualities so since we want our pineapple juice to go into the clarification process with more zing than it would normally have. To do this we're going to juice our pineapple and save 1 cup of juice, to which we'll add 1.5g of citric acid and .5g of malic acid. Stir to combine and dissolve the crystals. Then we're going to add 1/2 cup of full fat coconut milk to the acidulated pineapple juice and stir to combine. Store this in the fridge overnight. The next day pour the combined juice/milk through a nut milk bag until it runs clear.
Next we'll make the coconut oil fat washed rum. For this we'll use 1 cup of Plantation pineapple rum mixed with 2 tablespoons of coconut oil. Put the coconut oil and rum mixture in the refrigerator for about 1/2 an hour. The oil will have solidified on top, and you can just easily remove it.
Now you can build this clarified pina colada! Add 2 oz clarified coconut and pineapple juice and 1 oz of the coconut oil fat washed rum. Add the ice and stir for 30 seconds. Pour the clarified pina colada into a rocks glass over a large ice cube and garnish with a brandied cherry- and there you have it- a clarified pina colada cocktail. Delicious anytime of year.

    That sounds awesome! I made my own version of clarified pina colada. I used grilled pineapple juice, pineapple lime shrub, a non-deodorized coconut oil to fat wash flor de cana 7 year, and poured it over coconut milk and filtered it through a coffee filter. I stirred the filtered drink over ice with a toasted coconut infused cognac. It was very delicious.

    Finally managed to make this cocktail tonight with a couple of friends. It was really good! We were also excited to taste the coconut/pineapple "cheese". Writing it down it sounds disgusting, but it was really nice too! I got the idea that you could probably use it to make a kind of cheesecake, I mean it is pretty delicious and less waste is always good! Might make a habit of preparing this drink for larger events, depending on how the price of pineapples develops in sweden😅

    I was wondering about this the other day. As coconut milk has almost 50% more fat than whole milk it would be a option for milk punch. I would be willing to try fat washing some rums as well. If you are like me and have many "test" or "trial" bottles of liquor, have you thought of creating an "Infinity Bottle?"

    Coconut milk is great for milk punch. It is a bit more difficult to get clear, but letting it sit for a longer period seems to help. That’s actually a great idea. I have so many little bottles of leftover projects. It would be fun to try out an infinity bottle! Thanks for the suggestion!

    Oh yeah, finding the perfect pina colada is not an easy task :D The traditional is often poor balanced. Either too sweet, or not feeling the spirit. I mean it's good, but could be better. Gotta try your one :D I think that some tiki bitter could make a good job here, don't you think?

    I know everyone loves the clarifies cocktails but to be honest it’s WAY too much work. I’m actually clarifying coconut milk with acid and straining it is actually not worth it. I wish someone can invent a budget efficient straining device that speeds up the process
