30g . . . Dark chocolate(64% cacao)
150g . . Whipping cream
10g . . . Sugar
‣Chocolate Ganache
70g . . . Dark chocolate(64% cacao)
70g . . . Whipping cream
8g . . . . Corn syrup
‣Garnishing(optional)
powdered sugar
With sugared cranberries and rosemary sprig
Meringue mushrooms
▷Cocoa cake:Bake it at 360°F/180°C for 13-15 minutes
Swiss roll:Refrigerate for 2-4 hours

    Hello, nice to see you again! The number of egg yolks in the description box shld be 4 instead of 3 since you used the remaining white to make meringue mushrooms. How cute! Thank you for recipe and have a wonderful Christmas!

    您好,聖誕快樂🎄🎅🎁首先您要稱量蛋白的重量,比如蛋白21g,需要配21g糖,21g糖粉,3g玉米粉,相當於蛋白,糖,糖粉,玉米粉的比例是 1:1:1:0.15 蛋白加入糖,打至硬性發泡,加入糖粉和玉米粉拌勻,裝入裱花袋內,烤盤墊油紙,分別擠出蘑菇頭和蘑菇桿,撒上可可粉,烤箱預熱至70°C,烘烤150-180分鐘,出爐後冷卻晾涼,融化巧克力,將頭和桿沾在一起,放入密封袋內常溫保存,大概可以保存一個月
