Everybody has a different opinion on how to make lobster rolls. Whether top split or side split, butter or mayo, there is no single way to make a perfect one. Chris makes lobster rolls from scratch, starting by 'dispatching' the live lobsters (not for the faint of heart)

    I like Chris. He is talking continuously in the video and everything he says is informative. Not that I'm saying the others aren't but he seems like the kind of guy who was a professor teaching medicine in his past life or something. I can't put it into words but I am happy to see a video of him as much as Carla's, Brad's, Claire's and the others.

    They don't have a single brain though. They have several neural bundles and just taking out the one in the head doesn't kill it. I agree with brad that its probably best to just dunk them into the steam.

    There's no "pain chemical." There's a difference between pain, which is the conscious perception and emotional processing of bodily damage, and nociception, which is your body recognizing that it's damaged and is active even when you're under anesthesia. When you get a cut, nociception lets your body know to start sending white blood cells there and closing up the wound, and pain makes you go "ouch." Scientists have observed pain in crustaceans and other invertebrates; hermit crabs that get a claw torn off will use their other claw to feel at their missing claw, and flies can be trained to avoid certain areas that blast them with hot air. That's different from a simple avoidance reflex, because it requires processing and learning.

    Minus the fact he missed the most basic things like removing the rubber bands. Any restaurant doing this should be shut down. You can’t cook lobster with rubber bands in the water.... people with latex allergies could die.

    I love this channel. It completely bridges the gap between most amateur cooking channels on youtube like tasty and on the other side of the spectrum , like Gordon Ramsay's. Love the way all videos are filmed with each of you personally explaining out everything and the number of times you'd have to repeat to get the perfuct cut. Makes it all very humane.

    They have different central nervous systems than us, all that cut did was add more trauma before they were steamed to delicious goodness. The fear and sadness makes the meat more sweet.

    @@DignitaryPoodles but it is true tho. Cutting the lobster isnt the most humane way to kill it. The heat and the steam that comes out from the pot knocks it out imediatly, so yeah its not completly dead when the boiling starts, but its passed out and wont feel it.

    As a born and bred Maritimer, I recently had some lobster roll with green apple instead of celery. Blew my mind. A little sour and tart really compliments the meat.

    Your comment about tartness kind of makes me curious how it would taste with a sour cream based dressing rather than a mayo dressing. Might be good. Then again, the traditional ways of making any sort of classic dish usually became tradition for good reason.

Just because you buy your meat already dead and cut into pieces so you don't recognize it as an once alive animal doesn't erase the fact that it was killed just like you saw in the video and often times more cruel and much more painful

    Maine tip: with the tail you can break the fins off and easily push ur finger in to pop the meat out takes seconds and u don't have to worry about breaking the shell.

    I've only ever had 2 lobster rolls in my entire life. Both were last week, and two days in a row. Shuckin Shack has a killer lobster roll. Big chunks of lobster, those buns, and a light dressing to hold together the meat. There was no heretical celery nor lettuce, but they give you a side of lightly dressed shredded, peppery slaw which is the perfect topping for the roll. Buttery, sweet, and meaty. Sounds like an ideal date!

    I love BA videos because they’re funny and informative, but I gotta hand it to Chris. I love cooking lobster, and would say I’m not half bad at it. I learned so much from this video. The back-of-the-knife-into-the-claw-standing-up trick...game changer. Also, props for being the one to kill ‘em. You can tell they edited out the part where they go haywire and squirm. It’s tough, pretty emotional if we’re being honest, to do. But some one has to do it, because the end result is so delicious. Props Chris!

    Fantastic recipe and I loved the techniques you've shown with opening the lobster, especially the idea of the back of the knife! Also, I really enjoy Chris and his presentation style and demeanor, is there a playlist for the videos he's in?
