Chopped Flank Steak Street Tacos at the 2017 American Royal
Chef Tom was up at the Kansas Speedway with Yoder Smokers cooking the 810 Sports Party at the 2017 American Royal (the world's largest barbecue competition) and cooks up some Chopped Flank Steak Street Tacos on the Yoder Smokers 24x48 Flattop Charcoal Grill.

Hey man, it's been fun getting to know your brother Jim. Any good recipes for beef tongue or beef heart? I'm getting both for free because my in-laws, who recently had a cow slaughtered, don't know what to do with them. I'd love to hear some suggestions.
You can tell the difference in what us Mexicans call street tacos.
Awesome cook Tom..I personally thank flank steak is the way to go...back in the day that's all we had, no flap meat...flank is a better cut with a much better flavor...Once again you nailed it brother..

We don't cover it on shorter cooks like this, but when doing larger cooks that will take a bit longer we absolutely will close the lid on the flattop. Thanks!

For my carne asada. I normally use beef broth with some habanero and lime juice for my marinade. Obviously there's a few more things that I use in it. But that's kind of the base.

Flank steak tacos rule. I make a simple salsa, couple roasted tomatillos, garlic, guajillos, and about 50 arbols, and lots of onion cilantro and lime on the side!

anyone know how much this makes? I wanna make this for about 20 people.... 2-3 tacos PP??? triple it?
Is that the grates that come with the unit or did you all upgrade it. I look at yoder Smokers website and did not see same grates. Is that yoder grill but you have upgraded grates.

Do you cover your diffuser plate in foil? I do a fresh layer of foil each time I'm going for a long cook. Very easy to clean up.

We just scrape it down with a stiff plastic putty knife when it needs it. If it has a ton of buildup get it soaking in a tub with some Simple Green and then spray it off. Then maintain as necessary.

Delicious. But a REAL street taco is made with little corn tortillas and crisped/warmed up with oil on the grill.
Why do people call em "street tacos" in Mexico their just tacos . SMH .

It seems that calling them street tacos is common in Mexico as well, with Mexico City taking the title of one of the best places to eat in the street by Forbes, and they seem okay with it. But the reason is that they're smaller (4") and can be easily served from a cart. They call them "little cravings."

At least he got the pico de gallo right. Although I don't think I'd put slaw on a carne asada taco, it'd be okay to call a taco if it were on a corn tortilla.

Love watching your videos. Sorry but I have a few criticisms. If you're gonna call them street tacos please leave out the slaw and mid rare flank steak. when it comes to eating steak I can't believe when people order well done on a beautiful piece of meat but when it comes to tacos they just have to well done. again I really love your videos but this one totally missed the mark.

Cotija cheese has a distinct smell that some would say is "funky". People say it smells like feet so, you're somewhat right on your assessment lol... It's no worse (stronger) than bleu cheese or parmesan and I think it's delicious

the meat is not correctly chopping bc it still fucking raw or in this case rare. Pico de gallo is cool but not putting traditional salsa like chile de arbol. Okay whatever.
