About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZread.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

    There's a small amount of irony that this video comes out the week after I purchased stones for my knives at home! But it's alright because I actually reached out to David after remembering the wonderful videos you did with him Hiro, David was very patient and knowledgeable and helped me pick out a set of Masahiro 600, 1000, 3000 to get my knife back into shape. Great Customer Service and Product! I want to thank Mr. Terada for his videos and leading me to David and I want to thank David for his amazing work.     More amazing info from Dave! If anyone is thinking about trying out that $30 Naniwa 1000/3000, it works great! I have been sharpening my knives for work, and using it part time for my sharpening business, and after a little over a year I'm not even half way through each side. Great product for the price.

    Great second review of the many methods for sharpening our knives. After seeing the first Knife Merchant video with Hiro, I went to their website and then contacted them and determined the Miyabi was the choice for my use. After 30+ years of using Henckles 4 Star knives, it was time for a change up. The Miyabi is much lighter and has a very strong sharp edge that has performed super to date. Also, since I needed a curved boning knife, the Wusthof brand worked best due to the curved blade shape preferred. The Knife Merchant has competitive sales prices plus they will sharpen knives by hand to restore the blade as close to original as possible. I have been to several knife shops and they cannot replicate the edge from the factory most of the time so the edge doesn't last as long. Likely because they do not use wet stones choosing a small belt sander instead. Next time, my knives will get a wet stone resharpening. Thanks for the better camera lens and video close ups this time ! Much better for us viewers to see the details this time around so we can makes choices way better. Thanks Mr. Preston.

    Watching from Ukraine! This knowledge is good for everywhere in the world. Thank you. You may not believe but here for the last 100 years people at villages were sharpening their knives on concrete steps at the entrance to the house. And the knives were enough sharp to cut the pigs or cows or even cut the bread for pieces. A few minutes ago I and my daughter were watching "The Last Samurai" of Tom Cruise. Good movie about the Japanese culture and very sharp Japanese swords.

    Very nice whetstone presentation. I am at the beginning with sharpening and I am using mostly chinese whetstone. I can get pretty nice results with some of them. They are getting me to cheap scary sharp. :)

    Interesting, will have to check out the Masahiro stones. I use a Suehiro Cerax 1k mainly as my 1k stone and I absolutely love it. I have gone through a couple of them and enjoy the 320 and 700 as well. I also love the Naniwa Chosera 800 and 3k stones, the Shapton Glass 4k and 10k stones, and actually the Shapton Pro 12k is a cool stone. The Suehiro Cerax 1k is just a staple for me. It is simply a great feeling stone.

    My to go to sharpening stones are Shaptons (Kuromaku) #1000/2000/5000/8000 and lower grid (#120/220/600) Diasharp diamond plates by DMT. Interested in glass stones, heard they cut very well.

    It's no surprise when you find professionals who are informative and also have the products and know them inside and out while providing excellent service, you will use that source no matter where they are. It's hard enough just finding a source that can help you out and who will be there tomorrow with the same knowledgeable staff. Today, you can't find qualified employees and if you do, they are gone next time you look them up. Thus, you are stuck with uninformed "sales persons" or order takers.

    Diamond stones work well for flattening water stones, and they sharpen knives quicker than water stones, but they do leave the scratches on the edge of the blade. I use diamond stones up to the 1000 grit, polish with a 1000 grit water stone, then use a Chosera 3000 grit, King 8000 grit, and a 16,000 grit Shapton ceramic. Excellent educational video. I do not use Chinese stones, as their quality control is not good, as mentioned here.

    Actually Paul, I use the cup for the Chef's knives not the butter knives, it works great. In between I use the chef's steel.

    I use diamond plates to quickly establish the bevel geometry then ceramics for a polish. For me I want to sharpen my tools and get back to what I am working on. So speed is key. For a quick touch up I have it down to about a minute or so.

    Paul Frederick very nice. Yeah I’m thinking about getting some traditional for bevel setting. Maybe a Arkansas for polishing, if I can get my hands on one. A lot of people gets good results with the shapton glass

    @@hisdukeness3037 you can get Arkansas stones if you are willing to pay for them. Just like everything else. I'm still hoping to run across one for a good price in my travels. No luck yet though. I have bought a small pile of other stones in my search though. Pretty much every one I come across. I thought I had an Arkansas on Saturday. Turns out it just had spots of dirt on it though. It is some kind of a sedimentary sandstone. I can't pinpoint exactly what. I haven't even tried it out with anything yet. I just cleaned it up. I guess I'm just collecting stones now?

    As far as whetstones go, it doesn't get much better than the naniwa chosera 800, 3000, and the suehiro cerax 1000. But the masahiro 1000 and 3000 are really really good as well.

    King 1000 is the industry standard. Nearly every reviewer uses that stone as a basis of comparison.

    with a rust eraser u can clean ur stones pretty well for no money.... no need for a dressing stone i think ;)

    Dressing stone is a dollar cheaper. But this is for raising slurry. Rust eraser can remove particle build up from prior sharpenings, but then you have to rinse. Otherwise the eraser debris is left on the stone.

    You can spend that much if you don't shop around. If you want a sharp knife you need some kind of sharpening supplies. Or you have to pay someone else constantly to sharpen your knives for you. Or you can just eat out a lot I suppose. Again you're paying someone else to have sharp knives.

    Yes. Really hard steel can chew up some stones. I think everything shown here can handle pretty much everything though.

    Anyone know the lifespan of a diamond sharpening stone? Is it best to buy for heavy use?

    after 20 knifes or so, sharpeningwise, you wear away the film on top of the diamonds and it feels like it is "done", the feeling of the abrasive seems off, but don't worry, you are now just gliding over the diamonds and they are still sharpening fine. Remeber that diamonds don't need alot that pressure you'd put on a normal stone. Other than that, just buy the DMT ones and you'll be good for some time :)

    @@sjengkwee3395 Personally, I prefer stones over diamond plates.Stones imo give a way better sharpening feeling, the feedback can vary (in a good way) and you can try so many different things up until you arrive at the best stone for you. Feels more organic and fun to me. Also, an amazing mirror polish without stropping can only be done with stones. Even the 6k dmt diamondplate leaves back some undesired scratches. For Diamond plates, there are not so many to choose from. DMT or Atoma, although I would go for the DMT ones if you are gonna do some heavy use. To get to the bottom, if you are really a person to use them countless times for your very hard tools then go for diamondplates.(also it saves you time and cleanup) If not, and you are new to sharpening, go for an affordable stone.

    @@sjengkwee3395 short answer: Yes it is, as far as I can tell from recommendations of an actual blacksmith, making knives all the time. Less time investment, easier to care for and "working sharpness" in almost no time.

    @@Garth2011 Nope. It comes with two sides. One to sharpen, one to smooth the blade. works perfectly. It didn't have over 3000 5-star reviews for nothing.

    Jarod Kelly attacking people without any proof that stones can sharpen a knife better than a machine. Thats what losers do. I have 2 identical knives. I tested one on the stone and another on the machine time and time again. The knife on the machine outperforms the stone 10 out of 10 times. 3000+ people confirmed it on amazon.

    What I learned from this: Go take my knives to a pro and don't even screw around at home. I am a total idiot when it comes to this. I just don't have the feel, and believe me I have tried. My dad was really good at it but I just could never get the angle down.

    There's guide systems. I sharpen freehand but I've been at it for almost 50 years now. I was sharpening knives when I was a little kid. Before that I was sharpening sticks on the sidewalk. There's just something about sharpening that has always fascinated me. That keen edge.
