SERVES: 4 extra-large or 8 large sandwiches
INGREDIENTS
Vanilla Bean Ice Cream
2 1/2 cups whole milk
2 1/2 cups crema or heavy cream
1/2 teaspoon kosher salt
1 vanilla bean, split lengthwise and seeds scraped out
8 large egg yolks
1 cup granulated sugar
Chile Fudge Sauce
1/4 cup piloncillo or dark brown sugar
2 tablespoons agave syrup or honey
Kosher salt
3/4 cup heavy cream
1/4 cup whole milk
2 tablespoons unsalted butter
8 ounces bittersweet chocolate (60% to 72% cacao), chopped
1/4 teaspoon to 1 teaspoon ground chile de árbol or ground cayenne
1/2 teaspoon ground canela or cinnamon
Spicy Berry Sauce
1 pound fresh blackberries, blueberries, or strawberries
1/2 cup granulated sugar
2 tablespoons chopped candied ginger
1/8 teaspoon to ¼ teaspoon ground chile de árbol or ground cayenne
Kosher salt
To serve
8 small conchas or 4 regular conchas, halved lengthwise and warmed

    The way Rick laughs after he's taken the first bite, that's the story for me. He's such a lovely, lovely on-screen personality and a wonderful chef and teacher. And that apron...gorgeous!

    Rick is somebody that could invite you over and in 10 minutes you would be in the kitchen cooking beside him. He’d just put on some music, pour a couple drinks and teach you how to cook incredible food. And that’s a vibe.

    Looks delicious! If you want to soften the ice cream I'd suggest some combination of honey/corn syrup, milk powder, or something with alcohol like vanilla extract or vodka.

    It's okay to use a stand mixer with a whip attachment or hand mixer. When you're scalding the cream and milk, it's a good idea keep an eye on it because it will boil over.

    That looks delicious (and calorie bomb, but delicious...) Thank you so much for making real ice cream, I mean 'real' by churning it. I am a person who doesn't have any faith, therefore, I don't believe in "no-churn" ice cream. It's so deceptive. I don't think it's "no-churn" ice cream is actual ice cream, but just a very cold whip cream. Someone made them, and I tasted them once a long time ago. Although I held my diplomatic persona in front of her, I literally spit out behind the wall. It was horrible. What is your opinion/idea on the no-churn ice cream trend?? (well, I guess it's not that popular, but I know there are people who evangelise it.)

    Erm no. When things gets this complicated for compote vanilla ice cream and some kind of chocolate dipped sugar bun when you can just make it less messy and already prepared hard pass.
