There's probably metal frames inside of the chocolate to keep it stable. He just doesn't show it on video. Because no way it would support itself with some chocolate welding.

The chocolate needs an Oscar for holding on to that chain and not breaking

I enjoy his ability to take everyday and unlikely objects to make his molds. The parts used in assembling this large bell for instance. Truly a gift, imaginative mind.

He’s totally amazing! Love watching him. I’ve wondered what actually happens to these marvelous sculptures when he’s finished. I know he doesn’t eat them, even though his taste tests always invite a thumbs up. Anybody know? Plus he never seems to get chocolate on his perfectly white baker’s/chef’s uniform
