Chinese Food 101: North vs. South vs. East vs. West - Eat China (S1E1)

Chinese food is much more than just stir-fry, noodles, and dumplings. In this video, we break down Chinese food into roughly four schools-north, south, east, and west-and explain what makes them different.
This is the first episode in a 13-part series on Chinese food (we know, it’s a lot). Stay tuned for our deep dive into regional Chinese cuisine.

    Hi Clarissa and team! I've just finished watching this series and this has been a very well thought out and high quality content. Kudos to everyone who worked in this! Been searching for videos explaining the 8 Great Cuisines of China recently and I was so lucky I found yours! Your approach was refreshing to me and the food tours and how-to's were a delightful bonus! Also, since this is a season 1, is there any chance you would explore more cuisines in the future? A part of me is hoping you'll complete with the other 4 (Anhui, Fujian, Hunan and Zhejiang) but one can only hope, I guess 😅. Looking forward for more of your quality content and I hope every one is well and safe during these times. 🙂

  • @caratan474

    @caratan474

    xiaolongbao is kind of it's own thing... why you're seeing dumplings in soup is because it is LITERALLY dumplings IN soup. Dumplings come in many variations and can be cooked in many ways (pan fried, steamed, boiled in soup). As a person who grew up with Cantonese cuisine (and Chinese parents that do not eat anything other than Chinese food), I didn't have a xiaolongbao until well into college, but grew up with regular dumplings (jiaozi) steamed, pan fried, or tossed into soup.

  • @DavidFSloneEsq

    @DavidFSloneEsq

    2 жыл бұрын

    @@caratan474 Sorry. I probably wasn’t clear. I too grew up eating dumplings in soup, in styles from my own ethnic cuisine (Ashkenazic Jewish) as well as from Cantonese American cuisine - the stereotype that we New York Jews eat a lot of Chinese food for a not entirely unfounded. My point - which was infinitely nerdier - was that the narration reads, “soup dumplings, or xiaolongbao, and Yangzhou fried rice.” Given that it’s all written in standard American English, it wouldn’t make sense for the writer to call what we call “dumpling soup”, “soup dumplings”. Also, they wouldn’t have included the “or” unless they were trying to tell us that “soup dumplings” and “xiaolongbao” were two ways of referring to the same food. So, the graphics illustrate “dumpling soup, xiaolongbao, and Yangzhou fried rice”, rather than “soup dumplings, or xiaolongbao, and Yangzhou fried rice”. Again, it’s a totally nerdy point, but I’m guessing that the copywriter appreciated it.
