Today I am making chilaquiles rojos for breakfast. This is a breakfast I crave and love to make. The red sauce can easily be used for red enchiladas and is great to make ahead. This is gonna be good!

INGREDIENTS
cooking oil
10 corn tortillas
sliced onion
1 1/2 to 2 cups of red sauce
2 large eggs
queso fresco
fresh avocado
cilantro
Mexican crema
Red sauce Ingredients
4 to 5 guajillo chiles
1 Roma tomato
1 jalapeño
small piece of onion
1 clove of garlic
1 tsp chicken bouillon powder
salt to taste

When I make chicken or beef enchiladas I make sure I have lots of extra ingredients. The next day we have chilequiles but with chicken or beef mixed in instead of the eggs. I top mine with a little shredded lettuce or cabbage just to convince myself I'm eating "healthy," lol. So good.
Yummy. This was the first dish my Nana taught me to cook as a child 😊❤️.

Just last week I was at a different grocery store here in Vermont where I went shopping, and found all those dry chile varieties hidden in a corner of the produce section. Haha I will plan to make your recipe for chilaquiles for breakfast very soon... my husband will be absolutely thrilled. YUM

This is crazy this popped up right and I was JUST muttering to myself earlier today how I waa craving chilaquiles!
Looks good! One trick I learned is to buy the hard tortilla chips from the store and just mix it when the sauce is hot but don’t let them get soggy. But It’s usually with green salsa when I do it. 🙂

Toasting them also brings out the sugars adding flavor, just like browning meats.
I love love love chilaquiles and there are a million different variations of them. You mentioned something about mushy tortillas and I just made a Mexican Lasagna yesterday and layered everything and after it came out of the oven the corn tortillas were really mushy..... what did I do wrong? Should I have fried them crispy first before layering or used less sauce or is that just what they do?

Lightly fry the corn tortillas in some oil for 30 seconds. What this does is prevent the tortilla from soaking up the sauce and turning mushy. 👍

Not sure what you did wrong but I've made something similar, but I used Totopos, drenched in Chile Colorado. Comes out delicious.

Can I use chips from store? If so, do i have to fry them a bit in oil before i put in onions, or could i fry the onion a bit then chips then sauce? My husband has been craving these for awhile and I just needed one shortcut ( store chips) to get it done in a timely manner before he leaves for work. Thank you for video!

You can, but I find that chips from the store makes the dish not really the same. Partially because they already have salt on them whereas when you make them yourself there’s no need to add salt but also because the store bought-chips have a different texture than when you crisp them up yourself. You can always crisp them the day before, let them cool, and store in an airtight container.
Awesome! You’re chilaquiles I bet are delicious but for some of us we like the chilaquiles more on our he soft side topped with chorizo..
Can I use tomato paste if I don't have tomato sauce or a fresh tomato & if so how much would you suggest?
