    Hey there, my mother does pickles every year with our cucumbers. We used this 24 hour ready pickles. They taste like dill pickles but are crunchier than other recipes and taste amazing and are REALLY ready in 24 hours! They save for a heck of a long time, too.

    Throw some biochar into the compost bin every couple layers helps with the smell/nitrogen issue and innoculates the bio char

    Rebecca instead of a paper towel over your pickles, my mother put mason jar lids on the jars that were working off, that had tiny holes in the lid. She poked about 10 tiny holes in some mason jar lids & she used them when she was pickling pickles or making pickled sour Kraut. This was so while they were working or pickling off so it could breathe. Just a idea for ya Rebecca. She saved all her lids with tiny holes just for her pickling each year & used them again just for that purpose. After they worked off she put them in jars with vinegar & water with a regular sealed lid on the jar.

    Can't wait form my pickling cukes to produce so I can ferment some dills. I find it too warm here in Texas so I set a dorm fridge on a thermostat to 63 degrees. If I ferment at room temp they get soggy. Don't have grape leaves so I use oak leaves. I feel like the Mervyns commercial while I am waiting for them to grow!
