Chicken Tortilla Casserole

Packed with chicken, beans, tomatoes, and tortillas, this chicken tortilla casserole is one of my favorites, no matter the season. The best part is that once this casserole is baked, it can be customized by anyone in your family. Top it with guacamole, sour cream, spicy peppers, or anything your heart desires, and it will be a delicious weeknight meal.

INGREDIENTS
- 1 medium onion, diced
- 2 large bell pepper, seeds removed and diced
- 1 tsp kosher salt
- 1 tbsp chili powder
- 3/4 tsp cumin
- 2 15-oz cans fire-roasted diced tomatoes
- 1 15-oz can tomato sauce
- 2 boneless, skinless chicken breasts (about 1 lb)
- 1 15-oz can red kidney beans, drained and rinsed
- 6 flour tortillas
- 4 cups shredded cheddar cheese
- 1/2 cup chopped cilantro
INSTRUCTIONS
- In a large skillet, heat 2 tbsp of neutral oil over medium heat. Add the onion, bell pepper, and salt. Sauté until the vegetables are translucent and beginning to brown, 4-6 minutes. Add the chili powder and cumin. Stir the spices into the hot oil to bloom the spices for 30 seconds.
- Add the diced tomatoes and tomato sauce and stir to incorporate. Place the chicken breasts over the tomatoes and bring the mixture to a low simmer. Once at a simmer, cover and cook until the chicken breasts reach 160°F, 12 to 15 minutes. After the chicken has cooked, remove the breasts from the pot and set them aside to cool. Add the kidney beans to the tomatoes and stir to combine.
- When the chicken is cool enough to handle, shred the breasts into small pieces.
- Preheat the oven to 350°F.
- Remove the tomatoes and beans from the heat. Grease a 9x13 baking dish and spread ½ cup of the tomato mixture over the bottom of the baking dish. Add the shredded chicken to the mixture and combine. Lay two tortillas over the thin layer of tomatoes. The tortillas will overlap. Add 1/3 of the tomato mixture and spread evenly. Sprinkle with 1 cup of cheese and 1/2 of the chopped cilantro. Repeat these layers two more times ending with the final two cups of cheese on top of the casserole.
- Bake in the preheated 350°F oven until the cheese is beginning to brown and the casserole is bubbling throughout, 45-55 minutes. Once baked, remove from the oven and cool for 15 minutes before serving.

I made this earlier this week. I used corn tortillas because I love the flavour and I didn't have any sweet peppers so used poblanos and fresh jalapenos. It was fantastic. Thanks for the inspirition. ❤❤

I don’t like green peppers, but love red, orange, and sometimes yellow. This sounds like a winner, I have lo carb tortillas so I think it will work for keto!
I’m thinking I’d do this in a Dutch oven for the shape and size. More peppers please!

Beautiful casserole! And yes, it’s still a casserole without cheese. I’m going to make it cheeseless, add poblano peppers, use corn tortillas instead of flour tortillas, pinto instead of kidney beans, and throw in some enchilada sauce for part of the tomato. Big side of Mexican rice. Leftovers with a layer of jalapeño cornbread on top. I hate cheese, but some of us taste it as spoilage thru no fault of our own. Like the cilantro thing. And some people can’t eat dairy for other reasons.

I have this in the oven now, and I will pop back in to tell you how it came out. I can't wait to try it. I did notice that the recipe is different from the video where you used 4 chicken breasts and the recipe calls for 2 breasts. So I followed the recipe this time since it was what I was following. Either way I know it will be yummy. We here in TX are iced in and this just seems hearty and warming. Thank you for all your videos, I just love following you.

I made it, however, I didn’t care for the “ soggy tortillas”. The flavor of everything was good, except for I felt like I was eating wet tortillas. I enjoy your videos and will continue trying your recipes.
I enjoyed your way of explaining things and your confidence in cooking. I always appreciate when the recipe is made available and not just a pinch of this, a pinch of that... It looks really good! I am going to subscribe for more great casserole recipes...hopefully... Ooohhh!! Sunday lunch next week! Looks delish. I also poach chicken when making chicken soup right in the soup and then shred and add it back in.
My choice for cilantro substitute would be lime basil 🙌🏻 or if you don’t want a punch of flavor fresh parsley. I do love cilantro though 🙌🏻
Love the winter wonderland scene outside your kitchen windows! We did not do window treatments in our kitchen or dining room windows either to better enjoy the outside country scenes. Definitely will try this casserole! Also agree with you about shredding your own cheese. Love the full fat cheese, do not like the meltability of the skim milk or fat free cheese, how about you?

I'd make it with lasagna noodles!
I made this a few days ago and followed the recipe exactly, except that I used rotisserie chicken. And while the flavor was really quite good, I would not recommend using flour tortillas and to use corn tortillas instead. I will admit that my tortillas were not fresh and had been in the fridge for a couple of weeks, so that may have been the issue. But they turned into a rather mushy mess and I did not like the texture at all! This would be a great topping for nachos.
I’m going to try this one except use corn tortillas instead of flour ones. I can’t eat gluten.
If small tortillas how much should we use😊❤thx

😂don’t worry so much! Just cover each layer 1 tortilla deep.
Please advise the source of the tool you used to transfer the onions & peppers from the cutting board to the pot. Can’t find one with “sides” on it.

Oh gosh...I understand the concept of salting the onions & peppers, but it adds so much salt to the dish. Hard to add seasoning later on.
