Chicken Shashlik:
Ingredients:
Chicken breasts 2
Mustard paste ½ tbsp.
Tomato ketchup 1 cup
Ginger paste 1 tbsp
Garlic paste 1 tbsp
Bar bq sauce 2 tbsp
Black pepper powder ½ tsp
Red chili powder ½ tsp
Capsicums 2
Tomatoes 2-4
Onion 1
Lemons 2
Oil as required
Salt to taste
Sauce ingredients:
Tomato ketchup 3-4 tbsp
Bar bq sauce 2 tbsp
Mustard paste 1 tbsp
Red chili powder ½ tsp
Garlic paste 1 tbsp
Lemon 1
Salt, black pepper as required
Method:
Cut the chicken breasts into cubes. Then in a bowl add tomato ketchup, mustard paste, garlic paste, bar bq sauce, black pepper and some oil. Mix well. Now add chicken cubes in this mixture and marinate. Then cut the capsicums, onion and tomatoes into cubes. Now add the vegetables and lemon juice in the chicken mixture and set aside for a while. Then skewers the vegetables and chicken. Grill it over coals while spreading oil over them. For the sauce in a bowl add tomato ketchup, bar bq sauce, mustard paste, black pepper and lemon juice. Mix well. In the end serve the sauce with chicken shashlik and serve hot.
Hyderabadi Malai Qorma:
Ingredients:
Chicken (12 pieces) half
Onions 5
Garlic 1 tbsp
Ginger 1 tbsp
Red chili powder 2 tbsp
Almonds 10
Poppy seeds 2 tbsp
Cloves 10
Tomatoes 2
Cinnamons 5
Yogurt 2 cups
Whole dried milk 200 gm
Screw pine 6 tbsp
Cumin 1 tsp
Green cardamoms 10
Oil ½ cup
Salt 1 ½ tsp
Method:
In a pan heat oil and fry onions. Then add cloves, cinnamons, cumin, green cardamoms and red chili powder. Cook for 2 minutes. Now add chicken pieces and fry well for about 5-10 minutes. Then in another pan boil tomatoes and peel off the skin. Now add to the gravy, also add 1 cup water and salt. Cook until it gets a boil. Then peel the almonds and crush it with poppy seeds. Now whip the yogurt and add it in the chicken. Cook on a high flame. Then add crushed almonds and poppy seeds mixture. Mix well. In the end add screw pine and whole dried milk. Cook for 5 minutes and serve hot.
Motorway Daal Maash:
Ingredients:
Split black gram (soaked) 1 ½ cup
Tomatoes (chopped) 2
Onion (chopped) 1
Green chilies (sliced) 4
Garlic (chopped) 1 tbsp
Ginger (chopped) 1 tbsp
Salt 1 tsp
Chicken cubes 2
Coriander powder 1 tbsp
Red chili flakes 1 tbsp
Turmeric powder 1 tsp
Cumin 1 tbsp
Fenugreek leaves 1 tbsp
Garam masala 1 tbsp
Ginger (sliced) 2 tbsp
Fresh coriander (chopped) 4 tbsp
Oil ½ cup
Method:
Heat oil in a pan add onion and fry well. Then add ginger and garlic. Fry for a minute. Now add tomatoes, red chili flakes, turmeric powder, cumin, coriander powder. Cook well. Then add chicken cubes, split black gram and salt along with 4 cup water. Bring it to a boil and cook on a low heat until lentil is cooked. Now dry all the liquid. Then add garam masala, ginger, green chili, fresh coriander. Cook for about 5 minutes. Serve hot.
