Chicken Seekh Kebab or chicken shish kebab is an appetizer with Indian meals. These kebabs are skewered ground chicken seasoned with warm tandoori-style spices. Seekh (meaning skewer) kebabs are an extremely popular finger food in India.

Ingredients
500g ground chicken (finely minced - keema) or meat (lamb/goat/beef)
1 big size onion (finely grated & squeezed)
1 bunch coriander/cilantro (finely chopped)
2 green chillies (finely chopped)
1 tbsp ginger and garlic paste
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala powder
1 tsp ground black pepper
1 tsp red chili flakes
2-3 tbsp sattu/bread crumbs (helps to bind the chicken mixture)
1 juice of lime (optional)
1 egg (optional)
1 tsp salt
Instructions:
Step 1
Cut the boneless chicken into small pieces.Put them into a food processor or blender until the desired consistency is reached.
Step 2
In a bowl, add the ground chicken, finely chopped green chilies & coriander, ginger-garlic paste, coriander power, cumin powder, garam masala, ground black pepper, red chili flakes, sattu, 1 juice of lime, egg, and salt.
Step 3
Mix well all the ingredients.
Step 4
Refrigerate the mixture for about an hour or overnight to firm it up a bit so the kebabs are easier to shape.
Step 5
Line a baking tray with an aluminum foil and use it as a dripping tray.
Step 6
Remove the marinated chicken from the fridge. Grease your hands with a little bit of oil & take lime-size balls of the chicken mixture.
Shape the seekh kebabs on the wooden skewers (Gently press the meat with the help of your fingers and give it a cylindrical shape all around the skewer)and place on a grill rack. Brush the top of the kebab with oil
Step 7
Preheat the Oven at 190ºC for 10 minutes with convection fan, both upper & lower rod ON and cook or Bake at 190ºC in the middle rack for 30-35 minutes or till the seekh kabab are golden brown or cooked through. Turn the pieces over after 20 minutes so that they cook evenly.
Step 6
Serve with fresh coriander chutney, slices of onions and lime or with steamed rice & enjoy!
Notes
1. If you find that the chicken mince became a little sticky after mixing in everything just add some more sattu/bread crumbs. 1 tsp at a time.
2. Soak the bamboo skewers for 30 mins in water to prevent burning.
3. Squeeze out the juice from the onion completely
4. Try not leave any trace of water in the cilantro leaves.

    Sneha, you're extremely welcome. CONVECTION fan definitely reduce the time of baking but most importantly it helps to achieve the charred effect on the top layer of the food material like tikkas, tandoori, roasted chicken etc that are hard to achieve without CONVECTION.     I cooked mint chicken in the otg chicken but on steel skewers. Wooden skewers better?? It turned out very well. 200° for 30minutes or so. Visually how to make out if its done or needs more time in otg ? Next time i hope to try this recipe. Whts sattu that can be used instead of breadcrumbs.? Also video shot very very well. Esthetically 👌👌👌 Beautiful music 😍 The chicken would have been happy getting grilled too 😃 Happy cooking 😊

Steel and wooden skewers both are good, but wooden skewers need to soak for about 30 mins before using to avoid getting burnt due to heat. Sattu is a mixture of ground pulses and cereals. You can definitely substitute this with bread crumbs. Hope this will help

    Please forgive me Nazis, I never try this recipe in OTG, so can't give u the right feedback. Secondly, u forget to mention the no of family members as 60 liters is a way bigger in OTG catagory. Please make sure that the size is your right choice. Next, please try to buy an OTG with CONVECTION fan inside, which will definitely help you to bake almost all kinds of recipes.     All brands are good, choosing brands is completely your own choice, the basic three important functions you should consider before buying are 1) it should have a power rod selection knob. 2) have rottessari action and 3) should have a convection fan inside.     My mince mixture became very runny, it sticks on hands and I am not able to give it any shape.pls rply P.s...sattu was not available so I used corn flour and rice flour.

    Shazia wet your hands with water and try to give them shape. Let me know if it's fail. If possible please send few snaps to my FB or Instagram page so that I can take a closer look before suggesting you anything else.

    Amreen please forgive me for replying late. The basic principles of working of all the OTG are Same. So u can buy any brand as per your choice and budget. I have only used prestige from the last 5 to 7 years without any issues, I really have no idea about the other brands. Amreen please feel free if you have any other queries.     We'll use both upper and lower rod during the baking process. If u want charred effect, place the baking tray at the upper rack for last 5 to 10 mins

    Yes sir, I served hot only & about taste is not bad.....it was hard too.......I plan to try next time too with bread crumbs instead of Sattu powder thn convey u Sir

    I'm really very sorry it doesn't turn out well, but do u really think that it make much difference if you only change the binding agent ? (Replacing sattu with breadcrumbs) I think u must try some others recipe which should be entirely different. Sorry again for all the inconvenience caused 🙏

    Thank you so much Silvya, but if you really don't like the taste, it's better to move on to something else because I'm sure u'll definitely end up to the same even you add breadcrumbs, hope Silvya you understand my point. I strongly suggest you to try something else and let me know how does it taste or how we can improve the overall taste :)
